🦈Catfish pepper soup is a delicious recipe that is mainly prepared with catfish.
🦈Catfish pepper is also called point and kill fish, because of how the catfish is bought at local markets and also how it is prepared at restaurants. You select your desired fish by pointing at it and it is killed and prepared for you.
🦈Generally, Nigerian pepper soup are named according to the type of meat/fish used for the preparation of it, that is why this recipe is named catfish pepper soup, because catfish is used to prepare it.
🦈Catfish pepper soup is the most beautiful pepper soup of the different types of pepper soup recipes.

MAIN INGREDIENTS
🦈Catfish ( 1 large sized )
🦈Pepper soup mixed spice ( 1 tbsp )
🦈Scent leaf ( Nchua wun ) a handful
🦈Crayfish ( ground 1 tbsp )
🦈Red or yellow peppers ( to taste )
🦈Onion ( 1 large sized )
🦈Stock cubes ( to taste )
🦈Salt ( to taste )
🦈Fish sachet flavour ( optional )

PEPPER SOUP MIXED SPICE
( MAIN INGREDIENTS )
♦️3 - 5 Calabash nutmeg (Ehuru) seeds 15g
♦️8 pieces of negro pepper (Uda seeds) 10g
♦️1 tbsp Alligator pepper 10g
♦️2 seeds Gbafilo 15g
♦️Few Uziza seeds 30g
( OPTIONAL INGREDIENTS )

PREPARATION BEFORE COOKING
▪️Roast, peel and grind your calabash nutmeg.
Note: You can combine the Ehuru seeds, uziza seeds, and uda, tetraptra, gbafilo, and alligator peppers in a dry mill and grind/blend till you have a smooth powder, and store in an air tight container. This is called pepper soup spice. This could last for several months.
▪️Wash the onion and fresh peppers, place in a blender and roughly blend it or you can slice your onion and peppers into tiny pieces.
▪️Grind your crayfish and set it aside.
▪️Wash and pick the scent leaves or any other leaf of your choice and tear them up with your fingers into small pieces.

HOW TO PREPARE THE FRESH CATFISH BEFORE MAKING YOUR PEPPER SOUP
Step 1: Cut the Catfish into your desired sizes.
Step 2: Bring your water to boil, pour on the catfish, allow the water to covered the catfish and drain the water within a minute.
Step 3: Immediately, return the catfish into a normal cold water.
Step 4: Scrap the whitish back of the catfish with your kitchen knife gently.
Step 5: Wash your catfish with some lemon/lime juice or salt inorder to remove the slimy. Rinse the catfish thoroughly well with cold water.
Note: This hot water toughens the skin of the fish, so that it does not fall apart during cooking.
Step 6: You can now season your catfish with your stock cubes, pepper, onion and salt and allow it to marinate for at least 30 minutes before you start cooking it, as pepper soup.
Note: This step helps to give the catfish an excellent taste.

THE COOKING OF THE CATFISH PEPPER SOUP
Step 1: Place the washed catfish in a cooking pot and start cooking with just water to cover the fish and allow to cook for 3 to 5 minutes before adding your stock cubes, sliced onion, fresh ground peppers and salt and bring it to boil for 5 minutes.
Note: You have to limit the ingredients you want to use to cook the pepper soup, only if you marinate the catfish.
Step 2: Add in your pepper soup mixed spice, fish seasoning and crayfish, and cook for 5 minutes.
Step 3: You can now add the scent leaves.
Step 4: Once the catfish is done, taste for salt and other spices, and leave to simmer for 5 minutes.
Step 5: Turn off the heat and your mouthwatering catfish pepper soup is ready to be served with your white rice, boiled yam, boiled plantains or any other food of your choice.
