Oha soup—also known as Ofe Oha—is a rich, traditional delicacy from Eastern Nigeria, especially loved by the Igbo people. It’s earthy, comforting, and deeply flavorful. Here’s a classic recipe to guide you:

Ingredients
- Oha (Ora) leaves– shredded by hand to preserve their flavor and color
- Cocoyam (Ede)– 8–10 small corms (for thickening)
- Palm oil– about 1 cup
- Assorted meats– goat meat, beef, shaki (cow tripe), etc.
- Stockfish and dry fish– soaked and cleaned
-Crayfish– 1 cup, ground
-Ogiri Igbo– 1 tablespoon (optional but adds depth)
- Seasoning cubes 2 or 3
- Salt and pepper to taste

Instructions
1. Cook the cocoyam until soft (about 20 minutes), peel, and pound into a smooth paste.

2. Boil your meats with seasoning cubes and salt until tender. Add stockfish and dry fish halfway through.

3. Add palm oil, ground crayfish, pepper, and ogiri to the pot. Let it simmer for 10 minutes.

4. Scoop in the cocoyam paste in small lumps. Cover and cook until it dissolves and thickens the soup.

5. Add the Oha leaves last. Stir gently and let it simmer for 3–5 minutes. Don’t overcook—Oha is delicate.

6. Taste and adjust seasoning. Serve hot with pounded yam, fufu, or semovita.

Ingredients
- Chicken breast or thighs(boneless) – 250g
- Garlic– 1½ cloves, minced
- Olive oil– 1½ tablespoons
- Greek yogurt– 2 tablespoons
- Lemon juice– ½ teaspoon
- Spices**:
- Ground coriander – ½ teaspoon
- Allspice – ¼ teaspoon
- Paprika or chili powder – ½ teaspoon
- Cinnamon – ⅛ teaspoon
- Salt and black pepper – to taste

Fillings
- Lettuce
- Sliced onions
- Tomatoes (deseeded)
- Shawarma bread (or pita/tortilla wraps)

Sauce
- 3 tablespoons mayonnaise
- 3 tablespoons ketchup
- Optional: red chili flakes or cayenne pepper for heat

Instructions
1. Marinate the chicken: Mix garlic, olive oil, yogurt, lemon juice, and spices. Add chicken and let it marinate for at least 1 hour (overnight is best).

Bitterleaf soup—also known as Ofe Onugbu—is a beloved delicacy from Eastern Nigeria, especially among the Igbo people. Despite its name, a well-prepared version shouldn't taste bitter at all.

Ingredients:
- 2 kg cow head or assorted meat
- 3 cups washed bitterleaf (squeeze and rinse thoroughly to remove bitterness)
- 200 g dry fish
- 200 g stockfish head
- ½ cup ground crayfish
- 3 seasoning cubes
- 1 tbsp ogiri (fermented locust beans, optional but traditional)
- 300 ml palm oil
- Salt and pepper to taste
- Cocoyam (boiled and pounded) or ½ cup ofor as a thickener(optional)

Instructions
1. Season and boil the meat with salt, onions, and seasoning cubes. Cook until tender.

2. Add the dry fish and stockfish, then pour in more water and palm oil. Let it boil.

3. Stir in crayfish, pepper, and ogiri. Adjust seasoning.

4. Add the pounded cocoyam or ofor to thicken the soup. Let it dissolve and thicken the broth.

5. Finally, add the washed bitterleaf. Stir and simmer for about 6 minutes.

6. Taste and adjust salt. Serve hot with pounded yam, fufu, or semovita.

Here’s a simple and flavorful Ofada sauce (Ayamase) recipe you can try at home:

Ingredients
- 4 green bell peppers
- 2 scotch bonnet peppers (ata rodo)
- 1 large onion (divided)
- ½ cup palm oil
- 1 tablespoon locust beans (iru)
- 2 tablespoons ground crayfish
- 600g assorted meats (beef, tripe, ponmo)
- 2 seasoning cubes
- Salt to taste
- 4 boiled eggs (optional)

Instructions
**Blend the peppers**: Roughly blend the green bell peppers, scotch bonnet, and half the onion. Don’t add water.

**Bleach the palm oil**: Heat the palm oil in a pot until it becomes clear and slightly smoky. Do this in a well-ventilated area.

**Sauté aromatics**: Add the remaining chopped onion and locust beans to the oil. Fry until fragrant.

**Add the pepper mix**: Pour in the blended pepper and fry on medium heat, stirring occasionally, until the oil begins to float to the top (about 15–20 minutes).

**Season and simmer**: Add crayfish, seasoning cubes, and salt. Stir in the pre-cooked assorted meats and let it simmer for another 10–15 minutes.

**Finish with eggs**: Add boiled eggs and simmer for 5 more minutes.

Serve hot with Ofada rice or any rice of your choice. It’s smoky, spicy, and deeply savory—just the way it should be
