Ingredients

2 cups fresh spinach, washed

1 medium onion, chopped

2 cloves garlic, minced

1 medium carrot, chopped

1 celery stalk, chopped

1 small zucchini, chopped

4 cups vegetable broth or water

1 tablespoon olive oil

Juice of 1 lemon

Salt and pepper to taste

Optional: fresh herbs like parsley or cilantro

Instructions

Sauté Aromatics

Heat olive oil in a large pot over medium heat.

Add chopped onion and garlic, sauté for 2–3 minutes until fragrant.
