COMMON MISTAKES TO AVOID AS A PROFESSIONAL CAREER

1. Accepting an event without understanding the venue
A menu may be practical in one kitchen and difficult in another.

2. Treating guest count as the only planning factor
Service style, menu complexity, location, and timing also affect the assignment.

3. Assuming the client understands catering operations
Explain important requirements rather than relying on assumptions.

4. Agreeing to services that have not been properly defined
Unclear expectations create avoidable disputes.

5. Ignoring transportation requirements
Off-site catering requires more than simply placing food into a vehicle.

6. Depending entirely on one person
A professional operation should have clear responsibilities rather than one individual carrying every task.

7. Waiting until event day to discover limitations
Venue restrictions, equipment shortages, and access problems should be identified early.

8. Treating service as an afterthought
The catering experience continues after cooking is finished.

WHO IS A CHEF?

A chef is a trained or experienced culinary professional who is responsible for preparing food and, depending on their position, may also supervise kitchen operations, manage staff, develop menus, control food quality and oversee food production.

The word "chef" comes from the French term meaning chief or head. This reflects an important part of the professional chef's role: leadership.

A chef is therefore not simply someone who can cook.

A professional chef should be capable of combining:

Culinary Skill + Organization + Leadership + Food Safety + Consistency + Responsibility

The exact responsibilities of a chef depend on the workplace and position.

A chef working in a small restaurant may perform many different tasks personally, while an executive chef in a large hotel may spend more time supervising staff, planning menus, managing costs and maintaining standards.

WHAT IS HAPPENING TO OUR FACEBOOK FOLLOWERS?!

You work hard to grow your page, wake up expecting to see your numbers going up… only to discover that your followers have dropped AGAIN! 😩

You gain 20 today, lose 10 tomorrow, gain some back, then suddenly lose more.

And you're left wondering: Is it my content, or is Facebook doing something? 🤔

Sometimes follower numbers can change when people unfollow, accounts are deactivated or Facebook removes accounts it considers inauthentic.

But honestly…

ARE YOU EXPERIENCING THIS TOO?

Tell us in the comments: Have your Facebook followers been dropping lately, even when you're consistently posting? 👇🏽

Let's know we're not the only ones!

STOP! BEFORE YOU COOK THAT COW TOWEL, READ THIS! ⚠️

A few days ago, I had an argument with some people about cleaning cow tripe (towel) before cooking.

My position was simple:

I believe cow towel should be properly scraped with hot water and washed thoroughly before it goes into the pot. Period. 👌🏽

But what really shocked me?

A CHEF was among those who said there was no need for all that stress — that you can simply wash it and cook it. 😳

Honestly, that conversation reminded me of something I’ve always believed:

I don't take chances when it comes to how my food is handled.

This is one of the reasons I hardly eat food prepared outside my presence. Not because I think I'm better than anyone, but because I've seen how casually some people handle food.

And when I don't know what happened in that kitchen — how the meat was cleaned, what surfaces were used, whether raw and cooked foods were kept apart, or how carefully everything was handled — I'd rather be cautious.

For me, food isn't just about taste.
Cleanliness matters. Handling matters. Preparation matters. Food safety matters. 🧼🍲

Yes, different families and cooks have different methods of cleaning tripe. And hot water is not a magic substitute for proper hygiene or thorough cooking.

But personally?

🔥 I'd rather spend extra time cleaning my cow towel properly than rush the process and wonder whether I did enough.

That's my kitchen rule. ❤️

Now I want to hear yours! 👇🏽

How do you clean your cow towel before cooking?

🅰️ Scrape + hot water + thorough washing
🅱️ Wash thoroughly and cook
🅲️ Another traditional method

And to all the chefs and experienced cooks here — what's your professional take? 👨🏽‍🍳👇🏽

Let's discuss respectfully. Food safety is too important to turn into a fight. ❤️

STOP! If Your Egusi Soup Doesn’t Have THIS DEPTH OF FLAVOUR, You’re Missing Something! 😋

A truly delicious Nigerian Egusi Soup isn’t just about adding egusi and seasoning. The secret is in the right combination of ingredients, proper frying, and those native ingredients that give the soup its authentic, rich taste. 👌🏽🔥

🥣 INGREDIENTS YOU’LL NEED

🌰 Ground Egusi – 2–3 cups
🥩 Beef/assorted meat – as desired
🐟 Stockfish – soaked and cleaned
🦐 Dried crayfish – ½–1 cup
🐟 Smoked fish – 1–2 pieces
🌶️ Fresh pepper – to taste
🧅 Onions – 1–2 bulbs
🍅 Palm oil – generously, but moderately
🧂 Seasoning cubes & salt – to taste
🥬 Bitterleaf, ugu or spinach – chopped

🌿 NATIVE INGREDIENTS THAT CAN TAKE IT TO ANOTHER LEVEL

🔥 Ogiri – just a small amount for that deep, traditional fermented flavour.
🌿 Uziza leaves – adds a beautiful peppery aroma and depth.
🌰 Uziza seeds – use sparingly if you want an even stronger native flavour.
🐟 Dried or smoked fish – brings that rich, smoky seafood taste.
🦐 Quality crayfish – one of the easiest ways to deepen the flavour.

👩🏽‍🍳 THE SECRET TO A PERFECT POT

1️⃣ Cook your meat, stockfish and other proteins until tender. Keep the rich stock — don't throw it away!

2️⃣ Heat your palm oil gently and sauté your chopped onions.

3️⃣ Add your ground egusi and fry it properly, stirring continuously. This step helps develop that rich, nutty Egusi flavour.

4️⃣ Add your pepper, crayfish and some of your meat stock gradually. Stir and allow the egusi to cook properly.

5️⃣ Add your cooked meat, stockfish and smoked fish.

6️⃣ Season carefully and allow everything to simmer together so the flavours can marry.

7️⃣ Add your chopped vegetables toward the end. Don't overcook them.

8️⃣ Finally, add your uziza or a tiny amount of ogiri if you're using them. Allow it to simmer briefly, then take it off the heat.

🔥 THE RESULT?
Rich, nutty, aromatic Egusi Soup with layers of flavour — perfect with pounded yam, eba, semo, fufu or your favourite swallow. 🤤🍲

💡 PRO TIP: Don't let one strong native ingredient overpower the soup. Ogiri and uziza, especially, are powerful — a little can go a long way.

What is the ONE native ingredient you MUST add to your Egusi Soup to make it taste authentic? 😋🔥

🧄🫚 RAW GINGER & GARLIC OR POWDERED — WHICH DO YOU PREFER?

Fresh ginger and garlic can make a big difference in cooking! 👩🏽‍🍳🔥

When you use them fresh, you often get a stronger aroma, brighter flavour and more natural freshness in your soups, stews, marinades and sauces.

Powdered ginger and garlic are convenient and useful too, but their flavour can be less fresh and more concentrated.

👉🏽 Kitchen tip: If you have fresh ginger and garlic available, try blending or crushing them and adding them to your cooking. You may notice the difference in the aroma and taste! 😋

Fresh or powdered — which one do you use more in your kitchen? 👇🏽

WHY BREAKFAST MATTERS!

Breakfast is more than just the first meal of the day. ❤️

After several hours without food overnight, having a balanced breakfast can help refuel your body, support concentration, and keep you going through the morning.

It doesn’t have to be complicated — eggs and bread, oats and fruit, pap and beans, yam and egg sauce, or another balanced meal can be a great start. 🍳

Don’t let a busy morning make you forget to eat. Your body needs fuel too!

What did you have for breakfast today? 😋

A LITTLE ENCOURAGEMENT FOR YOU THIS AFTERNOON

Sometimes, life feels like a meal that isn’t coming together the way you planned.

You add your effort, your patience, your prayers… yet the result seems to be taking too long.

But remember this:

Good food takes time. So does a good life. 🍲

Don’t rush your journey because someone else seems to be ahead of you.
Don’t give up because your efforts haven’t produced the results you expected yet.

Keep showing up.
Keep learning.
Keep believing.
Keep doing your best.

One day, you’ll look back and realize that the waiting, the struggles and the small steps were all part of the recipe.

May this afternoon bring you renewed strength, fresh hope and a reason to keep going.

Whatever you’re working on, don’t give up just yet. Your story is still being written.

If you believe better days are coming, drop a in the comments.
