1. Bhat (भात) – Steamed Rice

🍗 Chicken Curry (Masu Ko Tarkari)
Ingredients:
500g chicken (bone-in preferred)
1 large onion (chopped)
2 tomatoes (chopped)
2 tbsp mustard oil (or regular oil)
1 tbsp ginger-garlic paste
1 tsp cumin powder
1 tsp coriander powder
1 tsp turmeric
1 tsp red chili powder
Salt to taste
Fresh coriander
Optional: 1 bay leaf, 2 cloves, 1 cinnamon stick
Instructions:
1. Heat oil, add bay leaf, cloves, and cinnamon.
2. Sauté onions until golden brown.
3. Add ginger-garlic paste and fry well.
4. Add chicken and cook until it changes color.
5. Add spices and salt. Mix well.
6. Add tomatoes and cook until soft.
7. Add water (1-1.5 cups), cover and simmer until chicken is cooked and gravy thickens.
8. Garnish with coriander.

🍲 Dal (Black or Yellow Lentil Soup)
Ingredients:
1 cup lentils (black or yellow moong/masoor)
1/2 tsp turmeric
Salt to taste
1 tbsp ghee or oil
2-3 cloves garlic (sliced)
Optional: Tomato, green chili
Instructions:
1. Boil lentils with turmeric and salt.
2. In another pan, heat ghee and fry garlic until golden.
3. Pour garlic tadka over boiled dal. Mix and serve.

🥦 Mixed Veg Tarkari (Vegetable Curry)
Use potato, carrot, green beans, cauliflower.
1. Heat oil, add cumin/mustard seeds.
2. Add chopped veggies, salt, turmeric, chili.
3. Add a little water, cover and cook until soft.

🌿 Saag (Green Leafy Veg)
1. Wash and chop spinach or mustard greens.
2. Heat oil, add garlic and fry saag until wilted.
3. Add salt. Stir well.

🌶️ Achar (Tomato or Radish Pickle)
Roast tomatoes or radish.
Mash and mix with salt, mustard oil, garlic, chili, fenugreek (methi), and lemon juice.
