Ingredients:
For the Pastry Dough:
- 1 1/2 cups all-purpose flour
- 1/4 cup confectioners' sugar
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, chilled and cubed
- 1 large egg
For the Chocolate Filling:
- 1 cup dark chocolate chips (at least 70% cocoa)
- 1 tablespoon unsalted butter
- 1 teaspoon vanilla extract
Instructions:
1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. In a medium bowl, whisk together flour, confectioners' sugar, and salt. Add cubed butter and use a pastry blender or your fingers to work it into the flour until the mixture resembles coarse crumbs.
3. In a small bowl, whisk together egg and a pinch of salt. Add this to the flour mixture and stir until the dough comes together in a ball.
4. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
5. On a lightly floured surface, roll out the chilled dough to a thickness of about 1/8 inch (3 mm).
