KFC’sChip Seasoning that comes with every Gonna Wanna Meal Box is the perfect addition to a salted caramel - perfect for my signature Salted Caramel Chocolate Tart.
Pastry
250g plain flour
125g cold butter
80g icing sugar
1 egg
½ tsp vanilla
Rub flour, butter and sugar to crumbs. Add egg and vanilla, bring together and chill 30 mins. Roll into a 23cm tart tin. Blind bake at 180°C for 15 mins, remove weights and bake another 8–10 mins until golden. Cool.
KFC Chip Seasoning Caramel
200g caster sugar
50g glucose syrup
60ml water
100ml cream, warmed
100g butter
1 tsp KFC Chip Seasoning
Cook sugar, glucose and water until golden. Remove from heat and carefully add cream, then butter. Stir through KFC Chip Seasoning. Pour into tart shell and chill until set.
Chocolate Ganache
250g dark chocolate
200ml cream
25g butter
Pour hot cream over chocolate, leave 2 mins, then stir in butter until smooth. Pour over caramel and chill until set.
Optional Swiss Meringue
100g egg whites
180g caster sugar
¼ tsp cream of tartar
½ tsp vanilla
Heat whites, sugar and cream of tartar over a bain-marie until sugar dissolves. Whip to stiff glossy peaks, add vanilla, spoon over tart and torch.
