Dark Spiced English Fruit Cake

Ingredients
โ€ข 2 cups (250g) all-purpose flour
โ€ข 1 tsp baking powder
โ€ข 1 tsp cinnamon powder
โ€ข ยฝ tsp nutmeg powder
โ€ข ยฝ tsp mixed spice or allspice
โ€ข ยผ tsp ground cloves
โ€ข ยฝ tsp salt
โ€ข 1 cup (227g) unsalted butter, softened
โ€ข 1 cup (200g) brown sugar
โ€ข 4 large eggs
โ€ข 2 tbsp molasses or black treacle
โ€ข 1 tsp vanilla extract
โ€ข 2 tbsp orange zest
โ€ข ยผ cup (60ml) orange juice
โ€ข 2 cups (300g) mixed dried fruits (raisins, sultanas, currants, chopped dates, and cherries)
โ€ข 2 tbsp all-purpose flour (for tossing fruits)

Instructions
โ€ข Preheat oven to 160ยฐC (320ยฐF). Grease and line an 8-inch round pan with parchment paper.
โ€ข In a bowl, combine flour, baking powder, spices, and salt. Set aside.
โ€ข In another bowl, cream butter and brown sugar until light and fluffy.
โ€ข Add eggs one at a time, beating well after each.
โ€ข Mix in molasses, vanilla, orange zest, and juice.
โ€ข Toss the dried fruits with 2 tablespoons of flour to prevent them from sinking.
โ€ข Fold the dry ingredients gently into the wet mixture.
โ€ข Add the coated fruits and stir just until evenly combined.
โ€ข Pour batter into the prepared pan and smooth the top.
โ€ข Bake for 1 hour 10 minutes to 1 hour 20 minutes, or until a skewer inserted in the center comes out clean.
