Pork Rib Tom Yum Recipe
(Thai hot and sour soup)

Ingredients:

1Β½ pods sour tamarind you can find this in a Thai or Asian grocery store
350 grams pork ribs
2 stalks lemongrass
3-4 slices galangal (Thai ginger)
6 kaffir lime leaves hand torn and bruised
Β½ tablespoon salt
1 teaspoon sugar
5 Thai bird's eye chiles roughly pounded
100 grams mushroom any kind you prefer

Procedure:πŸ‘‡

1. Add 1Β½ liters of water to a pot and simmer the pork ribs with the lemongrass, galangal, kaffir lime leaves and tamarind pods for about 50 minutes. Remove any fat floating on top of the liquid.

2. Use a slotted spoon to scoop the tamarind pods from the soup and hold the spoon just right above the surface of the soup. Use another spoon to squash the tamarind pulp through the slotted spoon into the soup and discard the membranes and seeds.

3. Season the tom yum with salt, sugar and Thai bird's eye chiles.
Add the mushrooms and let cook for about 1-2 minutes before turning off the heat.

Beef and Radish Soup Recipe

Yields: 4-6 servings
Prep time: 20 minutes
Cook time: 1.5 - 2 hours (longer for more tender beef)

Ingredients:

- 1 lb beef chuck or brisket, cut into 1-inch cubes
- 1 large daikon radish (about 1.5 lbs), peeled and cut into 1-inch cubes
- 8 cups water
- 2-3 scallions, thinly sliced (white and green parts separated)
- 1 inch ginger, sliced
- 2 cloves garlic, lightly crushed
- 1 fish sauce
- 1 tsp salt (or to taste)
- 1/2 tsp white pepper

Instructions:

1. Blanch the beef: Rinse the beef cubes under cold water. In a large pot, bring the beef and 2 cups of water to a boil. Boil for 3-5 minutes to remove impurities and scum, then drain. This step helps clarify the soup.
2. Simmer the beef: In the same large pot, combine the blanched beef, 8 cups of water, sliced ginger, and crushed garlic. Bring to a boil, then reduce heat to low, cover, and simmer for at least 1 hour, or until the beef is tender. Skimming off any additional scum that rises to the surface during simmering is recommended.
3. Add the radish: Add the daikon radish cubes and white parts of the scallions to the pot. Continue to simmer for another 30-45 minutes, or until the radish is tender.
4. Season and finish: Stir in the fish sauce, salt, and white pepper. Taste and adjust seasonings as needed.
5. Serve: Garnish with the green parts of the scallions and. Serve hot.

Tips and Variations:

- For a richer broth, you can roast the beef bones before simmering.
- Add other vegetables like carrots, potatoes, or mushrooms to the soup.
- For a more flavorful soup, add a few star anise or a cinnamon stick during simmering. Remove before serving.
- If you prefer a clearer broth, you can strain the soup after cooking.
- For a thicker soup, you can add a tablespoon of cornstarch mixed with a little cold water during the last few minutes of cooking.

Ingredients:

- 1 pound large shrimp, peeled and deveined
- 1 bunch asparagus, trimmed and cut into 1-inch pieces
- 8 ounces mushrooms, sliced
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon cornstarch
- 1/2 teaspoon sugar
- 1/4 teaspoon white pepper
- 2 tablespoons cooking oil

Instructions:

1. Prepare the Shrimp: In a bowl, marinate the shrimp with a pinch of salt, white pepper, and a teaspoon of cooking oil. Set aside for 10 minutes.

2. Blanch Asparagus: Bring a pot of water to a boil. Blanch the asparagus for 1-2 minutes until bright green and slightly tender. Drain and set aside.

Lumpia ,wrapper and sauce Recipe

MEATLESS Fresh lumpia!
ingredients :
-beans
-turnip /singkamas
-carrots
-sweet potato /kamote
-cabbage
-garlic and onion
-seasoning
-salt and pepper
-knorr shrimps cubes

Procedures :
-prepare the veggies -should be sliced thinly or julienne cut
-in a large wok/pan heat oil add garlic and onions saute until aromatics.
-put the hard veggies first.add the carrots and beans saute for couple of minutes then add the sweet potatoes., stir for 2 minutes before adding the turnip. Put the seasoning ingredients salt, pepper, Knorr shrimp or whatever you want to use. Cover and cook for few minutes. When it’s nearly cook add the cabbage.

LUMPIA SAUCE!

INGREDIENTS:
-2 and 1/2 cups water
-1/2 cups brown sugar(adjust)
-1/4 cup cornstarch
-4 tbsps soy sauce
-ground pepper
-msg(optional)
-1 tbsp minced garlic(rinsed)

PROCEDURES :
-in a sauce pan combine all the ingredients mentioned above. Mix well until dissolved. Cook over medium heat stirring continuously until it thickens

LUMPIA WRAPPER :

Ingredients :
-2 eggs
-1/4 cup cornstarch
-3/4 cup flour
-1 cup water
-3 tbsp oil
-pinch of salt
-pinch of baking powder

Procedures :
1. Beat the eggs well, then add the water, oil ,mix well, add the flour, cornstarch salt and baking powder. Mix until smooth strain the mixture.
2. Use a nonstick pan
-heat the pan ,scoop out 1/4cup of the batter mixture pour into the pan in a circular motion then swirl quickly to spread the batter cook on low flame setting for 3 to 4 minutes

Toppings:
1. minced garlic
2. Crushed peanut

1 pound (450g) beef sirloin or flank steak, thinly sliced across the grain

1 package (about 1 lb) baby bok choy, ends trimmed, leaves separated and rinsed

2 cloves garlic, minced

Minced Pork with Potato and Carrot πŸ₯•

Ingredients:

β€’ 350 g minced pork
β€’ 1 potato cubed
β€’ 1 carrot cubed
β€’ 3 cloves garlic minced

Marinate the minced pork:
β€’ 2 tosp light soya sauce
β€’ 1/2 tosp sesame oil
β€’ Pinch of white pepper

Sauce mixture:
β€’ 1 tbsp dark soya sauce
β€’ 2 tbsp oyster sauce
β€’ 1/2 tsp sugar
β€’ 1 tbsp tomato sauce

Procedure:πŸ‘‡

1. Pour a thin layer of oil in a wok/pan enough to cover the base.

2. When heated, add in potatoes and just leave it for a few minutes to cook. After 5 minutes or so toss over and continue frying for another 2-3 minutes. You want it nicely golden brown.

3. Add in carrots and cook for a few minutes. Don't overcook we still want some bite.

4. Add in garlic and pork and spread pork out. Don't toss it around yet. Let it just sit in the hot wok/pan till it fries off nicely at the bottom. Once you see some charred edges around the pork (after maybe 5 mins) add the sauce and half cup water and toss everything together.

5. Cook for 5 mins allowing the pork mince to soak in all the sauce. Take off heat. Transfer into serving plate. Serve and enjoy.

Garlic Shrimp Pasta
Ingredients:
1 lb medium shrimp, deveined and tails removed
1 lb spaghetti noodles (adjust quantity as needed)
6-8 garlic cloves, minced (adjust to taste)
1/4 cup butter
Olive oil (3 drizzles)
Italian seasoning, to taste
Fresh ground pepper, to taste
Red pepper flakes, to taste
Salt, to taste
Fresh herbs, to taste (such as parsley or basil)
Instructions:
Cook the Pasta:
Boil the pasta in salted water until tender. Optionally, add a drizzle of olive oil and some fresh herbs to the water. Reserve 1 cup of pasta water, then drain the pasta and set it aside.

CHICKEN CURRY WITH PINEAPPLE RECIPE

Ingredients:
2kg Chicken (clean and cut )
3 and 1/2 cups coconut milk
Pineapple chunks
potatoes
carrots
bell pepper
onions (chopped)
garlic (chopped)
1 tbsps ginger (minced)
2 pcs bay leaves (optional)
3 tbsps curry powder(adjust)
Red hit pepper
water
fish sauce
ground black pepper

Procedure:

-fry the potatoes and carrots for 5 minutes set aside

- Pan fry or sear the chicken 3 minutes each side,set aside

-Heat oil Saute onion, ginger and garlic. Add bay leaves Continue to cook until aromatic .

-Add the seared chicken back to the pan ,add curry powder saute nicely for couple of minutes.

-Pour the coconut milk reserve 1/2 cup for later. Cover and cook for 15 minutes .

-add the potatoes and carrots cook until soft/tender.

-when it's nearly cooked add the Pineapple chunks,the remaining coconut milk and bell pepper. Adjust the taste add some fish sauce and seasoning. Simmer uncovered for 3 to 5 minutes.

Garlic fried chicken

* Prepare ingredients
- Chicken thighs, garlic, cornstarch
- Seasonings: fish sauce, oyster sauce, pepper
* How to cook
1. Clean chicken thighs, remove bones and cut into bite-sized squares, marinate chicken with 1 tablespoon fish sauce, 1 tablespoon cornstarch, 1 tablespoon oyster sauce and a little ground pepper for 15 minutes
2. Leave garlic cloves intact, stir-fry until golden brown, then put on a plate
3. Heat oil, add chicken and fry until golden brown, add garlic, add 1 tablespoon fish sauce, stir well to absorb the spices. Finally, sprinkle some green onions on top for fragrance and you're done
