🍋 Frozen Lemon Cubes Recipe (Diabetic-Friendly)
Ingredients:
4–6 fresh lemons (preferably organic, since we’ll use the zest)
1 cup (240 ml) filtered water
Optional: a few fresh mint leaves or slices of ginger (for extra flavor)
Instructions:
Wash thoroughly
Scrub the lemons under running water to remove dirt and any wax. If not organic, you can soak them in a mix of water and vinegar for 10 minutes, then rinse.
Zest the lemons
Using a fine grater or microplane, remove the yellow outer layer (zest) of the lemons. Avoid grating the white pith—it’s bitter.
Juice the lemons
Cut the lemons in half and squeeze out all the juice. Strain it to remove seeds.
Mix with water
Combine the lemon juice and zest in a bowl with the filtered water. Stir well.
Pour into ice cube trays
Divide the mixture evenly into the compartments of an ice cube tray. If desired, add a mint leaf or small ginger slice into each compartment.
Freeze
Place the tray in the freezer until completely solid (about 3–4 hours).
Store for later
Once frozen, pop the cubes out and store them in an airtight container or freezer bag to prevent freezer burn.
How to Use:
Drop 1–2 cubes into warm water in the morning for a refreshing detox drink.
Add to iced tea or sparkling water for flavor without sugar.
Use in soups, curries, or salad dressings for fresh lemony taste.
Blend into smoothies for extra vitamin C.
