Fruit Soup

2 tablespoons quick-cooking tapioca
1 tablespoon sugar
1/2 cup orange juice
2 1/2 cups diced fresh fruits
1 1/2 cups water
Dash of salt

1. Place tapioca and water in a saucepan. Bring to a boil, stirring constantly.
2. Remove from heat.
3. Add sugar, salt, and concentrated orange juice; blend and cool, stirring once after 15-20 minutes.
4. Cover and chill.
5. Before serving, add fruits.
6. If a thinner soup is desired, add more juice or lessen the fruits; garnish the bowl with halved strawberries, orange sections, and bananas.

Garlic Soup

(for each person)
1 clove of garlic
1 thin slice of bread
1/2 cup water
1 egg
a little oil

1. Fry the garlic in some oil until it begins to brown, then add the bread.
2. Season with salt and MSG (optional).
3. Pour the boiling water over this.
4. Boil for 1 minute and serve.

Cream of Cucumber Soup

3 medium-sized cucumbers
3 tablespoons butter
1 tablespoon flour
3 cups evaporated milk
3 cups water
2 beaten egg yolks
1 teaspoon MSG (optional)
salt to taste

1. Peel cucumbers, cut in halves lengthwise, remove seeds, and slice very thin.
2. Melt butter in the saucepan and cook the cucumbers until transparent but not brown.
3. Blend in the flour and stir well.
4. Gradually add the milk, stirring constantly.
5. Pass the mixture through a sieve and simmer again in the saucepan.
6. Season with salt and MSG (optional).
7. Remove from the fire and add the beaten egg yolks.
8. Serve with crackers.

8 medium-sized potatoes, diced
2 teaspoons salt
3 cups milk or cream

2 medium-sized onions, sliced
2 tablespoons chopped parsley

1. Put potato and onions into a saucepan with enough water to cover them.
2. Add salt.
3. Cover and cook until potatoes are tender.
4. Mash the potatoes in the liquid.
5. Add remaining ingredients.
6. Repeat, stirring constantly, but do not let boil.
7. Garnish with parsley and serve immediately.

Cream of Corn Soup

4 cups canned or fresh corn, grated
2 egg yolks
2 tablespoons butter
2 tablespoons flour
2 cups evaporated milk
2 cups water
1 teaspoon MSG (optional)
salt to taste

1. Put the corn into a double boiler with 3 cups milk and cook for 20 minutes.
2. Make a white sauce of butter, flour, and the milk and corn mixture.
3. Add salt to taste and cook for 5 more minutes.
4. Beat the egg yolks and add to the remaining cup of cold milk. Stir this mixture into the soup.
5. Cook for 1 or 2 minutes, stirring constantly.
6. Water may be added if a thinner soup is desired.
7. Beat and serve.
