A Feast of Filipino Excellence: CAFÉ Bai Presents - Flavors of LuzViMinda
Filipino cuisine takes center stage this June as CAFÉ bai at bai Hotel Cebu unveils Flavors of LuzViMinda—an extraordinary culinary showcase bringing together seven of the country's most respected chefs for a historic 14-hand buffet collaboration.
Designed as a celebration of the Philippines' diverse gastronomic heritage, the event highlights the distinct flavors and traditions of Luzon, Visayas, and Mindanao, all thoughtfully presented in one elevated dining experience.
Representing the Visayas is Bai Hotel Cebu's Chef de Cuisine, Chef Ryan Estrada, a Cebuano culinary talent whose career spans some of Dubai's most prestigious hospitality brands, including Madinat Jumeirah, Jumeirah Beach Hotel, and Fairmont Dubai. Drawing from both local heritage and international expertise, Chef Ryan showcases the comforting and vibrant flavors of the central islands with refined ex*****on and contemporary flair.
From Luzon comes a powerhouse trio of culinary innovators. Chef Melisa Paguia Rocha, widely known as the country's "Caldereta Queen" and Culinary Director of Liam's & Louis Gourmet Café, brings her signature mastery of Filipino comfort cuisine. Joining her are Chef Welly Rosales, Sous Chef of Manila Marriott Hotel and Project Director of the Culinary Arts Chef Tag Philippines Organization, and Chef Richard Gomez, Executive Chef of Chad's Café Bar & Grill and Grand Winner of the Sarap Maging Vegan Cooking Competition 2025. Together, they present a compelling showcase of heirloom recipes, modern techniques, and sustainable Halal and vegan creations.
Completing the culinary journey is the Mindanao delegation, led by Chef Zheryl "Zhe" Jacinto, an award-winning culinary ambassador and consultant; Chef Mac Dowell "Mackyboy" Labrador, celebrated for his mastery of Asian and Western cuisines; and Chef JR Royol, MasterChef Pinoy Edition Grand Winner, television host, and advocate of sustainable gastronomy. Their creations capture the bold, vibrant, and culturally rich flavors that define the southern Philippines.
