Pumpkin Soup 🧡 recipe 👩🍳
Ingredients:
1 tbsp olive oil or butter
1 onion, chopped
2 cloves garlic, minced
4 cups pumpkin, peeled and cubed (or use canned pumpkin puree)
4 cups vegetable or chicken broth
1 cup coconut milk or heavy cream (optional for creaminess)
Salt and pepper, to taste
1/2 tsp ground nutmeg or cinnamon (optional for a warm flavor)
Fresh herbs, Crème fraîche or pumpkin seeds for garnish.
Instructions:
1. Sauté the Aromatics
*Heat the olive oil or butter in a large pot over
medium heat.
*Add the chopped onion and garlic, and sauté until softened and fragrant, about 3-4 minutes.
2. Add the Pumpkin and Broth
*Add the cubed pumpkin and broth to the pot.
*Bring to a boil, then reduce heat and let it simmer for about 20 minutes, or until the pumpkin is tender.
3. Blend the Soup
*Use an immersion blender to blend the soup until smooth. Alternatively, transfer the soup to a blender in batches and blend until creamy.
4. Add Coconut Milk/Cream and Seasonings
*Stir in the coconut milk or heavy cream, if using, for added creaminess.
*Season with salt, pepper, and nutmeg or cinnamon (if desired), adjusting to taste.
5. Serve and Garnish
*Ladle the soup into bowls and garnish with Crème fraîche and fresh herbs.
