Ingredients : PORK HUMBA
2 lbs pork belly or pork shoulder with skin, cut into 2 inches
3 pcs bay leaves
1 cup banana blossoms, soaked, rinsed and drained (optional)
2 tbsp brown sugar (add more as needed)
1 small can pineapple juice (1 cup)
1 cup water
1/2 cup salted (tausi) black beans, rinsed and drained
1/4 cup soy sauce
1/2 cup vinegar
6-8 cloves garlic, chopped
1 large onion, chopped
Instructions :
Using a wok, add slices of pork and water. Let it cook while stirring every few minutes until the oil is extracted from the pork. Push the pork on the side of the wok and add garlic and onion. Stir and cook for few minutes or until limp. Stir to combine the pork with onion and garlic. Cook for another minute.
Add star anise, bay leaves, peppercorns, vinegar and soy sauce. Continue cooking for 5 minutes. Add pineapple juice, tausi, brown sugar, banana blossom and stir. Reduce heat to low and simmer for about 15 minutes while stirring every 5 minutes. Remove scum if needed. Taste test if more salt or sugar is needed.
Continue to simmer for another 15 minutes or until pork has become tender and sauce thickens or until dry and the meat rendered its fat. (I like it with sauce for my rice) Remove wok from heat, discard some of the oil if needed and transfer in a serving plate. Serve hot over steam rice and enjoy.
