Lechon Manok is a Filipino-style roasted chicken marinated in a mix of spices. It's often served during special occasions and is known for its juicy, flavorful meat and crispy skin.

Here's a general guide on how to cook Lechon Manok:

1. Marinating the Chicken:

◦ In a bowl, combine soy sauce, calamansi or lemon juice, minced garlic, salt, pepper, and sugar. Some recipes also include onion powder and paprika.

◦ Place the chicken in a large resealable bag and pour the marinade over it, ensuring it's evenly coated.

◦ Marinate in the refrigerator for at least 4 hours, or preferably overnight, for the best flavor.

2. Preparing the Chicken for Roasting:

◦ Preheat your oven to 375°F (190°C).

◦ Take the chicken out of the refrigerator and let it sit at room temperature for about 30 minutes before cooking.

◦ Rub vegetable oil all over the chicken skin.

◦ Stuff the chicken cavity with knotted lemongrass stalks. Some cooks also use green onion or other preferred stuffing choices.

3. Roasting the Chicken:

◦ Place the chicken on a rack in a roasting pan, breast side up.

◦ 1/4 cup vinegar

◦ 1 tablespoon sugar

◦ 1 teaspoon paprika

◦ Score the skin of the pork belly diagonally with a sharp knife. This helps the skin crisp up during cooking.

2. Roasting

◦ Roast for 2 to 2 1/2 hours, or until the skin is golden brown and crispy, and the internal temperature reaches 160°F (71°C).

◦ For extra crispy skin, you can increase the oven temperature to 400°F to 450°F during the last 10 to 15 minutes of cooking. Watch carefully to prevent burning.

3. Resting and Serving

◦ Remove the lechon belly from the oven and let it rest for at least 10 minutes before slicing.

◦ Slice and serve with steamed rice and your favorite dipping sauce, such as lechon sauce or spiced vinegar.

• 1 cup milk

• ½ cup heavy cream

• 1 cup frozen peas (optional)

• Salt, pepper, and thyme (to taste)

• 1 tbsp sherry (optional)

Step-by-Step Procedure

1. Cook the Chicken

• Boil chicken in seasoned water (with bay leaves, thyme, and salt) until tender (~10–12 minutes). Drain and reserve 1–2 cups of the cooking liquid.
