Herb Roasted Chicken Drumsticks with Red Rice, Green Beans & Creamy Potato Salad 🍗🌾
Ingredients:
- 1 lb fresh green beans, trimmed
- 2 tbsp olive oil
- 1 tbsp parsley, chopped
- 1 lb baby potatoes, boiled and halved
- ½ cup mayonnaise
- 8 chicken drumsticks
- 2 cups chicken broth
- 1 tsp paprika
- 1 tbsp butter
- 1 cup long-grain rice
- 1 clove garlic, minced
- Salt and pepper to taste
- ½ tsp garlic powder
- 1 cup kidney beans
- 1 tsp salt
- 1 tsp onion powder
- 1 tsp dried parsley
- 2 tbsp tomato paste
- 2 tbsp sour cream
- ½ tsp black pepper
Instructions:
1. Season the Chicken: Begin by preheating your oven to 400°F (200°C). In a mixing bowl, combine olive oil, paprika, garlic powder, onion powder, dried parsley, salt, and black pepper. Rub this savory mixture generously over the chicken drumsticks, ensuring each piece is well-coated.
2. Roast the Chicken: Place the seasoned drumsticks on a baking sheet lined with parchment paper. Roast in the preheated oven for 40 to 45 minutes or until they are golden brown, crispy on the outside, and the meat is juicy and fully cooked.
3. Cook the Red Rice: In a medium saucepan, melt 1 tablespoon of butter over medium heat. Add the tomato paste and sauté for 1 minute. Stir in the long-grain rice and chicken broth. Bring to a boil, then lower the heat and cover the pot. Simmer for about 15–20 minutes or until the rice is tender and fluffy.
4. Prepare the Sides: In another pan, melt the remaining tablespoon of butter over medium heat. Add the trimmed green beans and garlic, sautéing until the beans are tender yet crisp, about 5–7 minutes. Season with salt and pepper to taste.
5. Make the Creamy Potato Salad: In a large bowl, combine the boiled and halved baby potatoes, kidney beans, mayonnaise, sour cream, chopped parsley, salt, and pepper. Mix well until all ingredients are smoothly combined and creamy.
6. Assemble and Serve: On a large serving plate, arrange the roasted chicken drumsticks alongside the fluffy red rice, sautéed green beans, and creamy potato salad. Garnish with fresh parsley for a vibrant and attractive presentation.
