Royal bibingka Recipe

● Ingredients:

● 3 cups glutinous rice flour
● 1 can coconut milk
● 3/4 can condensed milk
● 1 cup evaporated milk
● 3 tbs Melted butter
● 3 eggs
● 1/2 cup sugar
● 1/4 tsp salt

● Toppings:
Remaining condensed milk
Grated cheese

● Combine eggs, sugar, vanilla extract, pinch of salt. Stir to incorporate, add melted butter, condensed milk, coconut milk, evaporated milk. Slowly add glutinous flour. Mix until no lumps and smooth runny batter. Strain if needed.

● Bake for 30-35 minutes over 350*F, remove from oven. Add the remaining condensed milk, grated cheese and bake for another 15 minutes or until golden brown

Suman kakanin

Ingredients:
2 ½ cups coconut milk
Pinch of salt
2 cups glutinous rice, soak for hours
1 cup corn creamy style
1 cup brown sugar
½ cup latik
Banana leaves

Procedure:
Rinse the glutinous rice and soak for about 2 hours. After 2 hours, drain the water.
In a pan, pour coconut milk and add a pinch of salt.
Slightly boil, then add the glutinous rice. Cover the lid, and cook over low heat for about 10 minutes.
Add the corn creamy style, stir to incorporate.
Add sugar stir again to combine. Sprinkle 2 tbs of latik. Transfer to a plate and cool down.
Wilt, the banana leaves to become pliable.
Brush with coconut oil, add 1 big scoop of glutinous mixture. Roll and add latik. Roll again like a log and fold both ends to seal.
Arrange to the steamer and steam for about 30 minutes.
After 30 minutes, remove from the steamer. Cool down and serve.
