NO-BAKE LEMON CHEESECAKE 🍋☀️❄️

For the Crust:

1 ½ cups graham cracker crumbs (or digestive biscuits)

¼ cup melted unsalted butter

2 tbsp sugar (optional)

For the Cheesecake Filling:

2 cups cream cheese (softened)

1 cup sweetened condensed milk

⅓ cup freshly squeezed lemon juice

1 tbsp lemon zest

1 tsp vanilla extract

For Garnish (optional):

Whipped cream

Lemon slices

Mint leaves

INSTRUCTIONS:

1. Make the crust:

Mix graham crumbs, melted butter, and sugar until evenly combined.

Press into the bottom of a lined 9-inch springform pan or a rectangle mold.

Chill in the fridge for 30 minutes.

2. Prepare the filling:

In a mixing bowl, beat the cream cheese until smooth and creamy.

Add the condensed milk, lemon juice, lemon zest, and vanilla extract.

Beat until silky and smooth, scraping down sides as needed.

3. Assemble:

Pour the cheesecake mixture over the chilled crust.

Smooth the top with a spatula.

4. Chill:

Refrigerate for at least 6 hours or overnight until set.

5. Serve:

Slice and garnish with whipped cream, lemon slices, or mint leaves as shown in the photo.

SUMMER STRAWBERRY APPLE PUNCH 🍓🍎🍏⛱️🏖🌞

Ingredients:

2 cups fresh strawberries, hulled and halved

2 medium apples, peeled, cored, and sliced

1½ cups cold apple juice

1 cup cold strawberry juice or nectar

½ cup sweetened condensed milk (or adjust to taste)

1 cup cold water

1 tablespoon fresh lemon juice

Ice cubes (as needed)

Optional toppings: extra sliced strawberries, apple chunks, mint leaves

1. In a blender, combine strawberries, apple slices, apple juice, and strawberry juice. Blend until completely smooth.

2. Add sweetened condensed milk, cold water, and lemon juice. Blend again briefly to combine.

For the Cupcakes:
• 1 1/4 cups all-purpose flour
• 1 tbsp cocoa powder
• 1/2 tsp baking soda
• 1/4 tsp salt
• 1/2 cup buttermilk
• 1 tsp white vinegar
• 1 tsp vanilla extract
• 1/2 cup unsalted butter, softened
• 3/4 cup granulated sugar
• 2 large eggs
• Red gel food coloring (as needed)
For the Cream Cheese Frosting:
• 8 oz cream cheese, softened
• 1/2 cup unsalted butter, softened
• 2 1/2 cups powdered sugar
• 1 tsp vanilla extract
For the Raspberry Swirl:
• 1/2 cup seedless raspberry preserves or thick raspberry puree
• Red gel food coloring (optional, for a deeper swirl)

📝 Directions
1. Preheat oven to 350°F (175°C). Line a cupcake pan with 12 liners.
2. In a bowl, sift together flour, cocoa powder, baking soda, and salt.
3. In a cup, whisk together buttermilk, vinegar, and vanilla extract.
4. In a large bowl, cream the butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each.
5. Add red gel food coloring to the wet mixture until deep red. Gradually alternate adding the dry and wet ingredients, mixing just until combined.
6. Divide batter evenly among cupcake liners. Bake for 18–20 minutes, or until a toothpick comes out clean. Let cool completely.

Garlic Butter Steak Bites with Potatoes

Ingredients:

1 lb sirloin steak, cut into bite-sized pieces

1 lb baby potatoes, halved

3 tbsp butter, divided

4 cloves garlic, minced

1 tsp fresh rosemary (or thyme)

Salt and pepper

Fresh chopped parsley

Instructions:

1. Boil potatoes until fork tender, then drain.

2. In a large skillet, melt 1 tbsp butter and cook potatoes until golden and crisp. Set aside.

2 large sweet potatoes

1 cup baby spinach

½ avocado, diced

½ cup mushrooms, sliced

¼ cup crumbled feta cheese

1 tbsp olive oil

Salt and pepper to taste

Instructions:

1. Bake sweet potatoes at 400°F (200°C) for 45–50 minutes or until soft.

2. While they bake, sauté mushrooms in olive oil until browned. Add spinach and cook until wilted.
