❗️Cucumber Salad❗️

• 2 large cucumbers, thinly sliced (or use a mandoline for extra‑nice ribbons)

• ¼ cup thinly sliced red onion (optional, for a little bite)

• 2 tbsp rice vinegar or apple cider vinegar

• 1 tbsp sugar (or honey)

• 1 tsp salt

• ½ tsp black pepper

• A drizzle of sesame oil or olive oil

• Optional toppings: toasted sesame seeds, chopped cilantro, or a pinch of chili flakes for heat

How to make it

1. Toss the cucumber (and onion) in a bowl with the salt. Let it sit 5 min, then give it a quick squeeze to release excess water.

2. In a small cup, whisk together the vinegar, sugar, pepper, and oil until the sugar dissolves.

3. Pour the dressing over the cucumbers, mix well, and sprinkle your chosen toppings.

Butter Garlic Chicken on Pellet Grill

Ingredients:

• Chicken (whole or spatchcocked)

• Compound butter: softened butter, minced garlic, poultry seasoning, lemon juice, and optional BBQ rubs (citrus or garlic butter)

• Olive oil

• Seasonings: Everyday Rub, Simple Citrus Rub, Garlic Butter Rub

• Vegetables (optional, e.g., carrots, potatoes)

Equipment:

• Pellet grill (Traeger or similar)

• Pecan BBQ wood pellets

• Sheet pan

• Poultry shears

• Meat thermometer

Instructions:

1. Prepare compound butter: Mix softened butter with minced garlic, poultry seasoning, lemon juice, and optional BBQ rubs until smooth.

2. Preheat grill: Set pellet grill to 325°F using pecan wood pellets.

3. Prepare chicken: Spatchcock the chicken (remove backbone for even cooking).

4. Season: Rub compound butter under the skin and over the chicken.

5. Cook: Place chicken on an oiled sheet pan. Toss vegetables in olive oil and seasonings, then add to the pan.

6. Check temperature: Cook until the chicken reaches 165°F internally.

7. Rest and serve: Let rest 10–15 minutes before carving.
