A Life Shaped by Resilience: Josephineโ€™s Journey from University of Pangasinan to Entrepreneurial Success

In the busy, sun-drenched streets of Dagupan, Josephine Opilas sits at her eatery on Galvan Street, where the savory aroma of โ€œpigar-pigarโ€ dances through the air. For many locals, her establishment is more than just a place to grab a mealโ€”it is a testament to the journey of a woman who never let lifeโ€™s difficulties dim her resolve. Josephineโ€™s story is set in the heart of Dagupan, where she was born and raised, and where she forged her unyielding bond with the PHINMA University of Pangasinan (UPang).

Josephineโ€™s connection to PHINMA UPang was almost written in her stars. From elementary through college, the halls of this institution became a second home to her. But her time at the university wasnโ€™t an ordinary academic experienceโ€”it was a journey marked by hard work, sacrifice, and unwavering determination. In 1982, Josephine graduated from high school at PHINMA UPang, ready to face the next chapter of her life. But as life often does, reality soon complicated her dreams.

At the tender age of 16, while her classmates were focused on exams and adolescent adventures, Josephine found herself working at a nearby hotel to finance her studies. Balancing her academic responsibilities with a part-time job wasnโ€™t easy, but she carried the weight of her dreams like a quiet warrior, determined to carve out a better life for herself. For nearly a decade, Josephineโ€™s world revolved around the duality of studying and working, a feat that few her age could have sustained.

At 19, life added another layer of complexityโ€”marriage. Yet, Josephineโ€™s new role as a wife did not stop her from pursuing her education. She was determined to finish college, a goal that, despite the challenges of family life, she achieved in 1987. Looking back, she describes her experience at uPang as โ€œsmooth,โ€ though she is quick to acknowledge the ever-present faรงade of realityโ€”lifeโ€™s hardships that tested her capabilities.

After graduation, Josephineโ€™s life continued to evolve, but her entrepreneurial spirit was always bubbling just beneath the surface. Her pigar-pigar eatery is more than just a business; itโ€™s a celebration of Dagupanโ€™s rich cultural heritage and a reminder of her own resilience. Pigar-pigar, a traditional dish made from stir-fried beef and vegetables, is as much a part of the local identity as Josephineโ€™s story is tied to uPang. Her eatery became a symbol of the strength and determination she carried with her since her university days.

Today, Josephineโ€™s success story isnโ€™t just her ownโ€”it has extended to her family. Her two sons, Carlo and Octobre, followed in her footsteps and became proud PHINMA UPang alumni. Carlo earned a degree in Bachelor of Science in Hotel and Restaurant Management, carrying with him memories of our university that had evolved but still held the essence of the institution their mother had cherished. Octobre, Josephineโ€™s youngest son, graduated with a degree in Business Administration, majoring in Marketing, before embarking on a career with Toyota Motors and later moved to Canada to build a life of his own.

In many ways, Josephineโ€™s story is interwoven with the legacy of uPang. She has seen the university through the lens of her own trials and triumphs, and now, she passes that torch of perseverance to the next generation. Her support for her nephewโ€™s education is just one example of how she continues to give back, not just to her family but to the community she was once belonged.

Josephine Opilasโ€™s life is a tribute to the values of hard work and perseverance. Her story, shaped by her time at the PHINMA University of Pangasinan, is not just one of personal successes but of communal pride. The echoes of her experience ripple through the lives of her family, her customers, and the many individuals who have walked the same halls at uPang.

As she sits in her eatery, serving plates of pigar-pigar to hungry and tired folks, Josephine reflects on the path she has walked. Her legacy is not only etched in the memories of those who know her but also in the very fabric of the university that helped shape her. She embodies the spirit of resilience, proving that with determination and heart, even the most challenging of journeys can lead to triumph.

It had been almost two months since I started my journey at PHINMA University, and I could already feel how much I had grown both academically and personally. As a freshman, I had a lot of fears and doubts when I first stepped onto the campus. Would I be able to keep up with my classes? Would I make new friends? Would I find my place in this new environment?

The first week was filled with introductions and orientations. Meeting new people, learning about the campus, and trying to navigate through different buildings was overwhelming. But PHINMA had a welcoming atmosphere. The professors were approachable, always ready to guide us, and my classmates were friendly. There was this sense of community that made the adjustment a little easier.

One of the things I appreciated most was how the university fostered academic success. The teachers didnโ€™t just lecture; they engaged with us. They made sure we understood the lessons, and they encouraged us to ask questions. This was differentfrom what I was used to, and it helped me feel more confident in my studies. I realized that I was not alone in my struggles; everyone was trying to find their footing, and we were all in this together.

Despite the support, the workload quickly piled up. Balancing assignments, quizzes, and projects wasnโ€™t easy. I found myself staying up late to finish my tasks, but I knew it was part of the process. The university provided resources like the library and study spaces where I could focus. Group study sessions also became a regular part of my routine. My friends and I would review notes together, helping each other understand difficult concepts.

One of my biggest challenges was time management. There were days when I felt overwhelmed with the amount of work I had to do. But as the weeks went by, I learned how to organize my tasks better. I started using a planner to keep track of deadlines and set aside specific times for studying. This simple habit made a huge difference. I became more productive and less stressed.

Outside of academics, PHINMA gave me the opportunity to explore my other interests. There were clubs and organizations that catered to different passions. I joined a club focused on community service, where we organized events to help those in need. It was a rewarding experience to be able to give back and work alongside people who shared the same values as I did. It also helped me develop leadership skills, which I knew would be valuable in the future.

One of the highlights of my time at PHINMA so far was meeting new friends. I met people from different backgrounds and experiences, and we quickly formed bonds. We would hang out between classes, share stories, and support each other through tough times. The friendships I made here made the experience even more fulfilling. It was comforting to know that I had people I could rely on, especially during moments of stress.

Looking back at the past two months, I realized how much I had grown. I entered PHINMA unsure of myself and filled with doubts, but now I felt more confident and capable. The university had taught me not just academic lessons but life lessons as well. I learned the importance of perseverance, time management, and seeking help when needed.

My time at PHINMA wasnโ€™t just about getting good grades. It was about finding balance, building relationships, and preparing for the future. The university provided a supportive environment where I could thrive, and I knew that with continued effort, I could achieve my goals.

As I look forward to the months and years ahead, I am excited about whatโ€™s to come. There will be more challenges, no doubt, but I am ready to face them with the same determination I have now. PHINMA has already given me so much in just two months, and I canโ€™t wait to see how much more I will grow during my time here.

For now, I am content. I am grateful for the opportunities I have been given and for the people I have met. My journey at PHINMA has only just begun, but I know that it will be a meaningful oneโ€”full of learning, growth, and success.

โ€œIโ€™m sorry, but we have decided to move forward with other applicants, especially the younger ones. Thank you for your time.โ€ These were the words I often heard after a long wait regarding my applications to different fast food chains. It really breaks my heart every time I receive a rejection message because it all pertains to my age. I am 34 now, and itโ€™s my weakness. I often get neglected because of my age. I havenโ€™t even been given a chance to showcase my abilities and skills as a 34-year-old married woman. Yes, Iโ€™m already married, and I have a son. He is in grade 3 now. I am currently pursuing a Bachelor of Secondary Education, majoring in English. Iโ€™m in my third year now. You know, it took me a long time to decide to go back to school. Yeah! You read it right. I was supposed to graduate in 2015 with a Bachelor of Secondary Education, majoring in Mathematics. Yeah! You read it right again. I was a Mathematics major before. Want to know why I shifted? Okay! Then, let the story Begin.

In May 2010, some missionaries from South Carolina, USA, visited our church. Take note, they were foreigners. I was 20 years old at that time, and I was one of the active young members in our church. When those foreigners arrived at our church, of course, the young me was so amazed. I got the chance to meet real American people. I was really grateful to see blue eyes. It was weird, but thatโ€™s how I felt. I became a child who saw Doraemon in person. I was also thanking God for letting me see blue eyes in person. But hereโ€™s the worst part: I donโ€™t know how to speak English. Their accent was driving me insane. I was like, โ€œMay nabanggit na home. Siguro tinatanong kung taga saan akoโ€. I tried to understand them by getting the first word and the last word every time I talked to one of those foreigners. Then I put them together and tried to analyze their connection. By Godโ€™s grace, I was able to understand them and convey a message as well. Then, I was like, "Me... There. Our Home.

So, they stayed for one week. In that short time, I was able to build a relationship with one of them. Not the kind of relationship youโ€™re thinking ofโ€”cut that nonsensical thought of yours. This missionary became close to me. He was amazed by my dedication to our church and admired my hospitality and respectfulness. I stand out among the young members. I praise God for that. And you know, God is not passively watching us. I was rewarded for my unconscious good deeds. This particular missionary was used by God as an instrument to make my dream come true, which is to study in college. I enrolled in the University of Pangasinan. We are the first batch of PHINMA UPang students, if I am not mistaken. He paid for my tuition and gave me a monthly allowance. I know youโ€™re going to hate me because of the next scenario that Iโ€™m going to tell you. I was forcefully mandated to shift to another course or transfer to another school. Ever since, the University of Pangasinan has provided the highest quality education. If you choose to be one of UPang students, you have to take it seriously because this institution will bring out the best version of yourself. UPang will make you realize that you can do more than you think, and eventually, youโ€™ll believe that there are what we call higher-order thinking skills. Back when I was in college from 2010 to 2013, UPang professors were really genius, just like they are now. They are doing their very best to make their students extraordinary. I remember we were the first UPang students to have a departmental test. I think its like the Common Final Exam. We also have a quota of 2.50 GWA. It was really hard, but you have to do everything and fully focus on your studies. In my 3rd year, it was an elimination time. We were asked to compute our GWA. So, each student was very nervous about the result. Unfortunately, many of us failed. Iโ€™m one of them. I was so sad at that time, but I know that I did not do my best.

I had set in my mind the belief that a passing grade was enough. Getting 60% was enough as long as I passed. Because of that, I was mandated to shift courses or transfer to another school, as I could no longer continue my Bachelorโ€™s course in Education. It was really sad, but I chose to transfer to another school; however, I wasnโ€™t able to graduate from that school either because I gave up. I was having a hard time being irregular. Another reason is that I was used to UPang. In 2015, I met my husband, and in 2016, we had our first born child. I temporarily forgot about college, but in 2023, I decided to continue my education. I think it was really my time. I enjoy everything about school. I feel like the spirit of studying hard is running through my blood. However, thereโ€™s a big difference from before. I am struggling financially now. LOL. I tried to apply to different fast food chains where they allow working students, but I often get rejected because of my age. Until now, Iโ€™m trying. I wonโ€™t let poverty stop me from pursuing my dream. I thank God for my husband, who always supports me.

This is not the end of my story, but I apologize because I wonโ€™t give you a happy ending for the meantime. Before I end this story, I want to let you know that if you are given a chance to change your life, take it with all your heart and do your best to be fruitful.

Laki Adur is wide awake now.
Itโ€™s 4:30 in the morning. A full hour ahead of his usual waking time. For a 75-year old, he feels atypically sprightly today. It seemed ages ago when he last had a similar vigor to start a day.

He looked around to find Bae Goyang blissfully asleep beside him. She has been the one constant sight whenever he wakes up to a new day.
He seized the moment to examine her. The creases in her face looked deeper and more significant now. Her white hair seemed to illuminate in the dark more than ever. The veins in her hands are more betraying of her daily labor in the house. Yet, amid all these, there is still that unmistakable beauty that she persistently exudes all these years.

Bae Goyang is the caretaker of the house, the mother to his kids, his companion for the past 49 years. And today will mark their 50th anniversary as a couple.
Laki Adur plopped hotdogs into the boiling water. He wouldโ€™ve preferred tuyo, but the sizzling sound of frying might wake Goyang up and spoil his surprise treat. Of course, she will be surprised. He had not cooked for her for as long as he can remember. The last time he did, Bae Goyang was still in her 30s and recuperating in the hospital bed. She had just delivered Mario, the last of the five kids he sired her.
A faint smile formed in Laki Adurโ€™s lips as he remembers Mario. He just left yesterday for Makati, off to his first day at work in an Accounting firm. Wasnโ€™t he just a little bundle of joy back then, he reminisced.

Mario, being the youngest, is the last child to leave the house. The others left long ago to start their own families. Victor, Susan, Rosannaโ€ฆ they had delivered him seven grandchildren. Georgina, the fourth one, was married five months ago and is now 2 months heavy.

His kids used to turn the house into a playground. Now it is almost pristine and so quiet. It marks the first in a long time that he and Bae Goyang are all by themselves again in the house.

Adur was a trike driver when he met Goyang, then a freshman Education student at the university that he also shortly attended as an Engineering student. He was never good at numbers so he didnโ€™t last a whole semester. He ended up driving his fatherโ€™s old trike, calling passengers in front of the same university and enduring the mocking from his former classmates.

One day, he was able to fetch the young Goyang home. He was smitten. Goyang has always been lovely. She was, of course, much lovelier back then. He wooed the young lass, and after a few months of courtship, she fell for him, too. Their typical date was at the universityโ€™s park, partaking whatever meager meals they can prepare for themselves.

When Goyang was 19, she agreed to secretly marry the 25-year old Adur on a Valentineโ€™s Day.
The creaking sound of an opening door emanated from the nearby room. Bae Goyang is now awake. By this time, Laki Adur has already packed the freshly cooked food in a couple of plastic containers. He is also wearing his favorite white polo and a clean pair of black pants that match his black shoes.

โ€œAgi. Where are you bound to? Weโ€™re the only ones in the house now, do you plan to leave me alone?โ€, asked a visibly surprised Bae Goyang. โ€œWhy donโ€™t you prepare yourself, too? Iโ€™ve prepared your bath and your Sunday dress,โ€ Laki Adur quipped. โ€œAnto? Itโ€™s not even Sunday. What are you up to?โ€, Bae Goyang retorted. Laki Adur stood up, wrapped his arms around Bae Goyang, and let out a sheepish smile. โ€œWe might be old but age shouldnโ€™t stop us from doing the things we love. We had raised the kids well, theyโ€™re all grown up and independent now. When was the last time we bothered to find ourselves the time and space we used to reserve? We had done good jobs as parents despite the hardships, so let us go back to being lovers again,โ€ Laki Adur whispered. โ€œWeโ€™re in the twilight of our lives now, so letโ€™s make the most of our remaining time.โ€

He gripped her hand tightly and added, โ€œHappy anniversary, my one and only love.โ€

Teary eyed, Bae Goyang hugged Laki Adur.
As the cool breeze swept into the university park and impacts their faces, Laki Adur and Bae Goyang shared the packed meals amid passing students. The park is so different nowadays from what it was back in the day, but a familiar feeling pervades between them.

Time flies, seasons change. Yet, the one that truly matters always remains. That one love.
