Ube Biko Recipe

Ingredients
â–¢1 1/2 cups glutinous rice or sweet rice malagkit
â–¢1 1/4 cups granulated white sugar
â–¢1 3/4 cups water
â–¢1/2 cup ube powder powdered dehydrated purple yam or freshly grated purple yam
â–¢1/4 teaspoon salt.
â–¢1/2 teaspoon ube flavoring
â–¢4 cups coconut milk

Instructions

1.
Combine rice and water in a cooking pot.
Cover the pot and turn on the heat .

Adjust the heat to a simmer once the water starts to boil. continue to cook the rice until the water is completely absorbed.

Note: try to stir the rice once in a while to prevent it from sticking to the cooking pot.

Meanwhile, pour the coconut milk in another cooking pot .
Let boil.

Gradually add the sugar while stirring.
Put-in the ube powder and stir.
Cook for 5 to 7 minutes in low to medium heat while stirring.

Add salt and ube flavoring.
Continue to cook for 3 minutes or until the texture becomes thick.

6.
Once the rice absorbs the water, combine the coconut milk mixture to the glutinous rice.
Mix well and continue to cook while stirring until the rice is completely cooked and the desired texture is achieved.

7.
Transfer to a serving tray lined with banana leaves.

8.
Top with toasted grated coconut.

9.

Cassava Flan Recipe

Ingredients:

2 cups cassava, grated ( I used frozen ready-made cassava in a pack but fresh can be used by grating and squeezing some juice)

1/2 of 1 can coconut milk ( about 3/4 cup)

1/2 of 1 can condensed milk (about 3/4 cup)

1 large egg

7 & 1/2 tbsp sugar (2 & 1/2 tbsp each llanera mold)
butter for brushing

Procedure:

Spoon 2 1/2 tbsp sugar in a flan mold or lyanera. (Prepare 3 molds).

Caramelize over low heat until sugar turns to light golden brown.

Using a thong, swirl the caramel evenly on the flat side of the mold.

Remove from heat and cool completely.
​If llanera is not available, you can use these oval pan or oval ramekins

In a large bowl, add cassava, coconut milk, condensed milk and egg.

Stir until well combined.
Pour mixture into molds with caramel. Divide evenly into three molds.

Heat water on a steamer over medium heat. Steam for 45 minutes to 1 hour or until set.

Use a toothpick to test if it comes out clean. (Make sure to cover the lid with a cloth to avoid water drips.)

Remove from heat and cool completely.

To unmold, run a knife around the cassava flan. Place a plate on top of the mold and invert.

Tap the bottom of the mold a few times to release the flan.

Remove the mold.
The top will have some dark dark caramel.

You can smooth by scraping with a knife or spatula but that's optional.

Slice and serve. Enjoy!

P**O FLAN ( Recipes )

Butter - melted, for greasing the molds

EGG CUSTARD
4 egg yolks
¾ cup sweetened condensed milk
1 tablespoon vanilla extract

P**O BATTER
2 egg whites
½ cup fresh milk
1 cup all-purpose flour
½ cup sugar
½ tablespoon baking powder

Instructions

Brush the molds with some melted butter.
In a bowl, whisk together the egg yolks, sweetened condensed milk, and vanilla extract until well combined.

Fill in about a third of each mold with the custard mixture. Steam for 5 minutes.

Meanwhile, prepare the P**o batter. First, beat the egg whites with an electric mixer until soft peak forms.

Then add the fresh milk while continuously beating. Add the flour, sugar and baking powder and beat for another minute or two.

Pour some P**o batter on top of the steamed custard to fill about ¾ of the mold. Steam for another 10-12 minutes or until an inserted toothpick comes out clean.

Let them cool down a bit before removing from the molds.
