Sotanghon soup with meatloaf balls
For the meatloaf balls
Ingredients:
1 can meatloaf
1/2 cup grated carrots
2 tbsp chopped spring onion
1 tbsp chopped onion
1 egg
2 tbsp all purpose flour
2 tbsp bread crumbs
salt and pepper to taste
For the soup:
Ingredients:
1 liter water
1 onion
3 cloves garlic
1 small carrot
1/2 cup shredded cabbage
1 chicken cube
1 tbsp fish sauce
2 pcs sotanghon noodles
cooking oil
salt and pepper to taste
Procedure:
1. In a mixing bowl, add meatloaf and mash it using fork.
2. Add grated carrots, spring onions, onion, seasoning, egg, all purpose flour, breadcrumbs, salt and pepper.
3. Mix until well combined. Then scoop about 1 tbsp of mixture then form into balls.
4. Fry until golden brown. Set aside.
5. In a pot over medium heat, sauté onion, garlic and fish sauce. Then add carrot and water.
6. Add chicken cube and bring to a boil.
7. Add sotanghon noodles and cook for a few minutes.
8. After a few minutes, add cabbage and season with salt and pepper to taste.
9. Add meatloaf balls and simmer for a few minutes. Serve with chopped spring onion.
