Beef Bulalo, a classic Filipino beef shank soup! Here's a simple recipe:

# Ingredients
1. 1-2 kg beef shank, cut into large pieces
2. 4-6 cups beef broth
3. 2 cups water
4. 2 tablespoons fish sauce (patis)
5. 1 onion, chopped
6. 3-4 cloves garlic, minced
7. 2 tablespoons salt
8. 1 teaspoon black pepper
9. 2-3 tablespoons peppercorns
10. 2-3 potatoes, peeled and quartered (optional)
11. 1-2 cups vegetables (bok choy, pechay, or cabbage)
12. 2-3 tablespoons lemon or calamansi juice

# Instructions
1. In a large pot, combine beef shank, beef broth, water, fish sauce, onion, garlic, salt, pepper and peppercorns.
2. Bring to a boil, then simmer for 1.5-2 hours or until beef is tender.
3. Add potatoes (if using) and cook for 15-20 minutes.
4. Add vegetables and cook until tender.
5. Season with salt, pepper and lemon/calamansi juice.
6. Serve hot with steamed rice.

# Variations
1. _Bulalo with Bone Marrow_: Add beef bone marrow for richer flavor.
2. _Spicy Bulalo_: Add siling labuyo or chili flakes.
3. _Bulalo with Gata_: Add coconut milk.

# Tips
1. Use high-quality beef broth for depth of flavor.
2. Simmer slowly to tenderize beef.
3. Skim excess fat for clearer broth.
4. Serve with steamed rice and fish sauce (patis) on the side.
