Mr. Rowel Fran Fantilanan, Quality Assurance Head, shared their comprehensive food safety practices that safeguard every stage of the process—from receiving raw materials to delivering the final product.
“Ensuring product safety and quality and customer well-being is our top priority. Our food safety practices cover every stage, from receiving ingredients to serving the final product. Key practices include:
1.    Personal Hygiene: Our team adheres to rigorous hygiene standards to minimize contamination risks. This includes frequent handwashing with soap and water, especially after using the restroom, handling raw ingredients, or touching surfaces that could be contaminated. Gloves are worn when handling ready-to-eat foods, raw meat, poultry, or seafood, with a strict protocol to change gloves between tasks. Hairnets and aprons are mandatory to prevent hair and clothing fibers from contaminating food, jewelry is also prohibited, as it can harbor bacteria and hinder thorough cleaning.
2.    Safe Food Handling: Temperature control is crucial to prevent bacterial growth. We store perishable ingredients below 4.44°C, freeze items properly to maintain quality, and cook foods to the recommended internal temperatures. Hot food is held at 60°C or higher to keep it safe for consumption. We also prevent cross-contamination by using separate cutting boards, utensils, and containers for raw and cooked items, with all surfaces, equipment, and utensils sanitized after each use. To ensure food freshness, we implement a First In, First Out (FIFO) system and label all foods with contents, receipt date, and expiration date. Regular pest inspections and professional services further contribute to a clean and safe environment.
3.    Food Safety Training: Staff are encouraged to undergo regular food safety training and obtain certifications. They are also empowered to report potential food safety concerns.
4.    Record Keeping: We log refrigeration and cooking temperatures, maintain ingredients traceability, and document any food safety incidents for ongoing improvement.
5.    Continues Improvement: Regular internal audits and inspections help identity risks, ensure compliance, and enhance our food safety practices.”
