Baked Chicken Biryani
Ingredients:
1. _Chicken_: 1 1/2 lbs boneless, skinless chicken breast or thighs, cut into 1-inch pieces
2. _Basmati rice_: 2 cups
3. _Aromatics_:
1. 2 medium onions, chopped
2. 3 cloves garlic, minced
3. 1 medium carrot, peeled and grated
4. _Spices and seasonings_:
1. 1 tsp cumin seeds
2. 1 tsp coriander seeds
3. 1 tsp turmeric powder
4. 1 tsp red chili powder
5. 1 tsp salt
6. 1/2 tsp black pepper
5. _Liquid_:
1. 2 cups chicken broth
2. 1 cup water
6. _Garnish_:
1. Fresh cilantro, chopped
2. Fried onions, for garnish (optional)
# Instructions
1. _Prepare rice_: Rinse basmati rice and soak in water for 30 minutes. Drain and set aside.
2. _Marinate chicken_: In a large bowl, combine chicken, cumin seeds, coriander seeds, turmeric powder, red chili powder, salt, and black pepper. Mix well and marinate for at least 30 minutes.
3. _Sauté aromatics_: Heat 2 tbsp oil in a large skillet over medium heat. Cook onions, garlic, and carrot until softened.
4. _Add chicken_: Add marinated chicken to the skillet and cook until browned on all sides.
5. _Assemble biryani_: In a large baking dish, create a layer of cooked rice. Add a layer of chicken and aromatics, followed by a layer of rice. Repeat for 2-3 layers, ending with a layer of rice on top.
6. _Add liquid_: Pour chicken broth and water over the rice.
7. _Cover and bake_: Cover the dish with aluminum foil and bake in a preheated oven at 375°F (190°C) for 30-40 minutes, or until the rice is cooked and the liquid is absorbed.
8. _Serve_: Garnish with chopped cilantro and fried onions (if using). Serve hot.
