My Dining Experience at Masskara Chicken (Singcang Branch)
Masskara Chicken has long been one of Bacolod’s go-to places for chicken inasal, so visiting their Singcang branch felt like a familiar food stop rather than a first-time experiment.
For our dine-in, we ordered a wide selection from their menu: Pechopak (chicken breast with wings), Paa (quarter leg), Isol, Isaw, grilled blue marlin, fried squid heads, and pancit canton guisado. A mix of inasal staples and seafood favorites.
The chicken inasal delivered that traditional Bacolod flavor profile. Slightly sour, tangy, gingery, and smoky. It was grilled well overall, though there were moments when the meat leaned a bit on the dry side. Still, the familiar taste made it satisfying, especially when paired with garlic rice and dipping sauce.
The grilled blue marlin was a pleasant surprise. Lightly salted with a subtle smoky finish, it was simple yet flavorful. The pancit canton, however, didn’t quite work for me. The noodles were already soggy and felt overcooked, making it the weakest dish on the table.
On the other hand, the fried squid heads, my all-time favorite, did not disappoint. Crispy on the outside, savory on the inside, and best enjoyed when dipped in their vinegar with pepper and garlic. It was easily one of the highlights of the meal.
Ambiance-wise, the Singcang branch was clean and comfortable. Compared to the NGC branch, which can feel hot and dusty due to its location near the main road, this branch felt more relaxed. I highly recommend choosing the air-conditioned room for a more enjoyable dining experience.
Final Verdict
Masskara Chicken Singcang offers a solid and familiar inasal experience. While there’s room for improvement with consistency and some side dishes, it remains a dependable spot for traditional Bacolod flavors.
