Goat Liver Namkeen (Kaleji Fry) Recipe

Ingredients

½ kg goat liver (kaleji)

3–4 tbsp oil or ghee

1 medium onion (optional, sliced)

1 tsp ginger garlic paste

1 tsp salt

1 tsp red chili powder

½ tsp turmeric

1 tsp crushed black pepper

1 tsp coriander powder

2–3 green chilies

1 tsp crushed cumin

Lemon juice

Fresh coriander

Method

1. Wash the liver well and cut into small cubes.

2. Heat oil/ghee in a pan.

3. Add onion and fry lightly golden (optional).

4. Add ginger garlic paste and cook for 30 seconds.

5. Add liver and cook on high flame for 4–5 minutes.

6. Add salt, red chili, turmeric, coriander powder, cumin, and black pepper.

7. Cook uncovered until water dries and liver becomes tender. Do not overcook or it becomes hard.

8. Add green chilies and fry 1–2 more minutes.

9. Turn off flame, add lemon juice and fresh coriander.

Serving

Serve hot with:

Naan

Roti

Paratha

For extra “namkeen hotel-style” taste, add:

A little chat masala

Butter/ghee at the end

Extra black pepper
