**دہی بھلے کی ترکیب**

**اجزاء:**
- 1 کپ اُرد دال
- 1 کپ چنا دال
- 1 چمچ ادرک پیسٹ
- 2-3 ہری مرچ (پسی ہوئی)
- نمک (حسب ذائقہ)
- تیل (تلنے کے لیے)
- 2 کپ دہی
- 1 چمچ زیرہ (بھنا ہوا)
- 1 چمچ سرخ مرچ پاؤڈر
- 1 چمچ کالا نمک
- 1 چمچ میٹھا مصالحہ
- چٹنی کے لیے:
- 1/2 کپ پودینہ
- 1/2 کپ ہرا دھنیا
- 2 ہری مرچ
- نمک (حسب ذائقہ)
- 1 چمچ لیموں کا رس

**ترکیب:**
1. اُرد دال اور چنا دال کو 4-5 گھنٹے کے لیے بھگو دیں۔
2. بھیگی ہوئی دال کو بلینڈر میں پیس لیں، ادرک پیسٹ، ہری مرچ، اور نمک ڈال کر اچھی طرح مکس کریں۔
3. تیل کو گرم کریں اور ہاتھوں کو تیل لگا کر چھوٹے چھوٹے بھلے تیار کریں۔ انہیں گولڈن براؤن ہونے تک تل لیں۔
4. تلے ہوئے بھلوں کو گرم پانی میں 10 منٹ کے لیے بھگو دیں، پھر ہلکے ہاتھوں سے نچوڑ کر نکال لیں۔
5. دہی کو اچھی طرح پھینٹ لیں اور بھلوں پر ڈالیں۔
6. چٹنی کے لیے پودینہ، ہرا دھنیا، ہری مرچ، نمک، اور لیموں کا رس بلینڈ کر لیں۔
7. بھلوں پر چٹنی، بھنا زیرہ، سرخ مرچ پاؤڈر، کالا نمک، اور میٹھا مصالحہ چھڑکیں۔

Ingredients (Toum - Garlic Sauce):

1/2 cup garlic cloves, peeled

1/2 tsp salt

1/2 cup lemon juice

2 cups neutral oil (vegetable or canola)

Step-by-Step Instructions (Shawarma):

Marinate: Whisk together lemon juice, olive oil, vinegar, spice mix, and salt. Add the sliced beef, toss well, and marinate in the fridge for at least 4 hours (or overnight).

Cook: Heat a large skillet or griddle over medium-high heat. Add the marinated beef in batches (do not overcrowd) and cook for 3-5 minutes, until browned and crispy at the edges.

Serve: Pile the meat onto a platter. Surround with accompaniments (French fries, sliced tomatoes, chopped parsley, pickles, and pita bread).

1 tsp cumin powder

1/2 tsp black pepper

1/2 tsp paprika

Salt to taste

Wooden or metal skewers

Flatbread, for serving

Step-by-Step Instructions:

In a large bowl, combine the ground meat, grated onion (ensure the excess moisture is squeezed out), chopped parsley, cumin, black pepper, paprika, and salt.

Mix the ingredients thoroughly with your hands for 5-7 minutes. This is a crucial step to create a sticky texture that will prevent the kebabs from falling off the skewers.

Cover the bowl and refrigerate the mixture for at least 1 hour. This allows the flavors to meld and the meat to firm up.

Full Tandoori Chicken Recipe (Uncut) 🐔🍗

Ingredients:

For Cleaning & Slitting:
1 whole chicken (900g–1.2kg), skin removed and cleaned
1 tbsp lemon juice
Salt (to taste)

First Marinade:
1 tbsp lemon juice
1 tsp salt
1 tsp red chilli powder
1 tsp ginger-garlic paste

Second Marinade:
½ cup thick curd (hung curd preferred)
1 tbsp ginger-garlic paste
1 tbsp mustard oil (heated and cooled)
1 tsp Kashmiri red chilli powder (for color)
½ tsp turmeric powder
½ tsp garam masala
1 tsp cumin powder
½ tsp black pepper powder
Salt to taste
1 tsp chaat masala (optional)
1 tbsp besan (roasted gram flour)
Few drops of orange-red food color (optional)

Method:

1. Prepare the Chicken:

Clean and pat dry the whole chicken.

Make deep slits on the legs, breast, and thighs to help the marinade pe*****te.

2. First Marinade:

Rub lemon juice, salt, red chilli powder, and ginger-garlic paste all over the chicken.

Let it rest for 20–30 minutes.

3. Second Marinade:

In a bowl, mix all ingredients for the second marinade.

Rub this mixture generously all over and inside the chicken, pushing into the slits.

Cover and marinate in the refrigerator for at least 6 hours or overnight for best flavor.

4. Cooking: Option 1: Oven

Preheat oven to 200°C (392°F).

Place the chicken on a wire rack or tray, baste with oil or butter.

Roast for 35–45 minutes, turning and basting halfway until fully cooked and charred.

Option 2: Tandoor / Grill

Cook in a traditional tandoor or charcoal grill, turning and basting until fully cooked and smoky.

Option 3: Pan

Sear on high heat to get color, then cover and cook on low heat until fully cooked, or finish in oven.

5. Serving:

Rest for 5–10 minutes before cutting.

Serve with onion rings, lemon wedges, and green chutney.
