Whenever I enjoy lehsun, I am overcome by a strange sensation. In English, we can easily describe this as nostalgia. However, in Urdu, there is indeed a lack of a better word as no direct translation seems to exist.

We can call it remembering the past, however, it wouldn’t be fair to compartmentalise this joy as merely reminiscing. This goes far beyond mere memory. You aren’t just returning to that moment in time, but life itself seems to be altering itself to fit that mould. Suddenly you are seven and wondering why this qeema tastes so different.

Then you are made to understand that this is not qeema at all. These are crumbs of rotis made with pearl millet flour that are then cooked with ghee and garlic chives and served with yogurt and crushed smoked eggplant. In Memon households, this is called lehsun. It may look a little weird now but it is one of the more important relics of your childhood. Thus, this enjoyment is less reminiscing and more of a time that has long since passed.

With today’s Daastan, I am Nusair Teli

Recipe :

Ghee
Crumbs made from Bajre (Pearl Millet) ki roti
Garlic Chives (Hara Lahsun)
Salt ( if needed but usually it isn’t because the bajre ki roti usually has enough salt)
Yogurt
Eggplants (roasted on an open flame and peeled)

Quantities once again are from the heart. I mean, I could give approximates but I mostly eyeballed this recipe, that is how I was taught to make it. That is especially true given how all of the quantities are to be adjusted to taste.

There is some bad news. Everything is temporary. Whether it’s a brilliant story, a TV show, or some year or month. It is all temporary. We are lulled into a sense of satisfaction and suddenly, it’s all over. We think we have time on our hands but then that time becomes a thing of the past.

But there is some good news too, that everything is temporary. Whether it is difficulties, pain, longings or loneliness. It all is temporary too. We are brought to the brink of despair only to be granted salvation. And suddenly that time that wouldn’t pass, passes.

Everything is temporary.

With Today’s Daastan, I am Nusair Teli

Cheeseburger Samosa
Ingredients:

Beef mince roughly 1kg
3 large onions, finely diced
3 tomatoes, finely diced
7-8 cloves of garlic, finely minced.
5-6 small gherkins, finely chopped
3-4 pickled jalapeños, finely chopped.
Roughly 500 grams cheese (I used a mix of mozzarella and processed cheddar)

Burger sauce:
Mayonnaise (I used a mix of kewpie and regular)
Ketchup
Thai Chilli Sauce (not sriracha)
Mustard (I used a mix of English and Dijon)
Worcestershire Sauce
Quantities for the sauce are all up to taste. I eyeball it all.

Today’s Daastan is a prayer. A prayer for peace in this world of ours. A prayer that the cruel carrying out injustices, they understand the consequences of their actions. A prayer for the innocent souls suffering those injustices and difficulties, for them, may justice and ease prevail.

Prayer is the bare minimum that can be done. Not everyone has it in them to stop injustices but in our neglect and disregard, we can so easily stay quiet in the face of those injustices and allow them the space to flourish. Thus, a prayer is also for the end of our own neglect.

A prayer will be said but with that, voices will also be raised. Raised against all injustices, whether they are in Palestine, Iran or in our own Pakistan.

Recipe: Peach Iced Tea
Ingredients:
Strong Brewed Black Tea
Peach Puree
(OPTIONAL) Peach Juice Powder or similar
(OPTIONAL) Mint Leaves
Lemon Juice
Ice
Water

Everyone has their own way of expressing love. Some do small, everyday tasks for those they care about. Some search for the very best things they can possibly find. And some choose to express their love through grand, romantic gestures.

Me?

Well, I cook.

Every dish I prepare is done so by choosing each ingredient with care and intention. Why the butter is warmed in a certain way, or why two different kinds of sugars are used; every decision is deliberate and measured. And then the final touch, the crowning moment, the detail that elevates the flavour and emotion, cannot be ordinary. Even if it must be finished with salt, you can be certain that even that salt would be the finest.

And so when you take that first bite, your face lights up with a smile. That smile is the reason I cook for the ones I cherish.

Recipe:

150 grams butter (browned)
½ cup white sugar
¾ cup brown sugar
1 ¾ flour
1 tsp baking powder
1 tsp baking soda
1 tsp vanilla
1 tsp salt
150 grams milk chocolate chunks
75 grams dark chocolate chucks
Coarse sea salt to top Co

Have we ever wondered about what has inspired us in life? Something someone said that didn’t just resonate with us but led us to change our entire point of view? Oftentimes, it so happens that the thing that inspired us, we are barely aware of it. And then, one fine day, someone suddenly says, “Wow, you look so inspired by so-and-so!”

They say it and move on and we are left drawing in thought. Inspired, us? How? We were just living according to what we believed was right. That must be the result of our own opinions and point of view. Our own hobbies, desires and emotions. How does inspiration factor in here?

Yes, some passions were born out of close observations, not just by merely watching. Some, we can’t even tell when they became passions but they are now part of our being, our nature. Maybe then it is justified to ask, were we born with these passions or are they a coincidence of being effected by inspiration?
