Stuffed chicken cheese eggplant/brinjal

Instructions
1. Pre-heat the oven to 75 centigrade
2. Slice the eggplants into half by lengthwise. and carefully hollow out inside of eggplant, leaving a sturdy shell for stuffing
3. Fill a large bowl with water and putt eggplant shells in water bowl.Put a plate on the eggplants to keep them submerged in the bowl; soak until preparing the filling.
4. Put the olive oil to the saucepan and then add finely chopped onions cook until golden brown add eggplant sauté for few minutes then add tomato paste cook until tomatoes and eggplant is fully cooked about 5-10 minutes then add yogurt and cook Aad chicken (I used cooked leftover chicken if you using raw chicken then add in starting after onions) cook for 1-2 minutes remove from flam and set aside.
5. Remove the eggplants from the bowl and Stuff each eggplant ‘belly with prepared mixture. Then add the grated cheese and fresh coriander on top.
7. Put stuffed eggplants in baking tray lined with baking paper
8. Bake it in the oven for 15 minutes until the cheese melted ,Serve hot with your favourite dish.
Tips;
(If you are on diet add cottage cheese instead of cheddar or mozzarella cheese).
