Crispy Chicken Wings

Ingredients
• 1 kg chicken wings (cut into flats and drumettes)
• 2 tbsp vegetable oil
• 1 tsp salt
• 1 tsp garlic powder
• 1 tsp paprika
• ½ tsp black pepper
• ½ tsp onion powder
• ½ tsp baking powder (for extra crispiness)

Optional Glaze (for saucy wings):
• 2 tbsp honey
• 1 tbsp soy sauce
• 1 tbsp hot sauce or ketchup
• 1 tbsp melted butter

Instructions

Pat the chicken wings dry thoroughly with paper towels — removing moisture helps them crisp up.

In a large bowl, combine baking powder, salt, garlic powder, paprika, black pepper, and onion powder. Add wings and drizzle with oil. Toss until evenly coated.

Preheat your oven to 200°C (400°F). Line a baking tray with foil and place a wire rack on top. Arrange wings in a single layer (do not overcrowd).

Bake for 40–45 minutes, flipping halfway through, until golden brown and crispy.

For air fryer: Cook at 190°C (375°F) for 20–25 minutes, shaking halfway.

If you want them saucy, combine honey, soy sauce, hot sauce, and melted butter in a pan. Toss the hot wings in the glaze until well coated.

Sindhi Chicken Biryani 🍗

Ingredients - Biryani Masala
1tbsp Coriander Seeds
10 Green Cardamoms
2 Cinnamon Sticks
1 Black Cardamom
1/2tsp Black Pepper Corns
5 - 6 Cloves
1tsp Fennel Seeds
1tsp Cumin Seeds
1/2tsp Black Cumin Seeds
1/4 piece Nutmeg
1 Star Anise
2 Dry Red Chillies

1tsp K. Red Chilli Powder
1/2tsp Turmeric Powder
1/2tbsp Salt
2 Bay Leaves

Method :
1. Add the first part of the whole spices mentioned starting from coriander seeds to dry red chillies to a pan. Dry roast for 2 - 3 mins. Grind to a fine powder.
2. Add red chilli powder, turmeric powder, salt and bay leaves and mix well.

Ingredients - Biryani Gravy

500g Chicken
2tbsp Ginger Garlic Paste
1/2 Cup Curd
2 Fried Onions
2 Green Chillies
1/2 Cup Tomatoes
6 - 7 Aloo Bukhara
Chopped Coriander
Few Mint Leaves

1/2 Cup Oil
2 Potatoes
1/2 Cup Water

Method :
1. In a bowl, add chicken, above ingredients and half the biryani masala.mix well. Marinate for 30 mins.
2. Heat oil in a vessel, add marinated chicken and cook on high flame for 5 mins.
3. Add potatoes and water. Mix well
4. Cover and cook for 20 mins or till potatoes are cooked.

Ingredients - Biryani Rice
500g Basmati Rice
2 litres Water
2 Bay Leaves
Few Lemon Slices
1.5tbsp Salt
1tsp Black Cumin Seeds
1tbsp Oil

Method :
1. Add water in a vessel, add bay leaves, lemon slices, salt, black cumin seeds, oil. Bring to a boil.
2. Add soaked rice and cook rice 70 % and strain

Ingredients - Biryani Layering
1tbsp Oil
Tomato Slices
Jalapeno Slices
Orange Red Food Color
Chopper Coriander
1tbsp Kewra Water
2tbsp Ghee

Method :
1. Add some oil on the base to prevent biryani from burning.
2. Spread a layer of rice and biryani gravy with chicken.
3. Spread a layer of rice and remaining biryani gravy. Spread rice and place slices of tomato, jalapenos, chopped coriander, food color, kewra water and ghee.
3. Cover with cloth and lid and cook on high flame for 2 - 3 mins, when the vessel is hot, place it on a tawa and cook on dum for 20 mins on low flame.

لاہوری چنے انڈے کے ساتھ

اجزاء:

سفید چنے (ابلے ہوئے) – 2 کپ

انڈے – 4 عدد (اُبال کر چھیل لیں)

پیاز – 2 عدد (باریک کٹی ہوئی)

ٹماٹر – 2 عدد (باریک کٹے ہوئے)

لہسن ادرک کا پیسٹ – 1 کھانے کا چمچ

ہری مرچ – 2 عدد (باریک کٹی ہوئی)

ہلدی – ½ چائے کا چمچ

لال مرچ پاؤڈر – 1 چائے کا چمچ

دھنیا پاؤڈر – 1 چائے کا چمچ

زیرہ – 1 چائے کا چمچ

گرم مصالحہ – ½ چائے کا چمچ

ہرا دھنیا – گارنش کے لیے

نمک – حسب ذائقہ

تیل – ½ کپ

ترکیب:

1. ایک پین میں تیل گرم کریں، اس میں پیاز ڈال کر سنہری ہونے تک بھونیں۔

2. پھر اس میں لہسن ادرک کا پیسٹ شامل کریں اور خوشبو آنے تک بھونیں۔

3. اب اس میں ٹماٹر، ہلدی، لال مرچ، دھنیا پاؤڈر، زیرہ اور نمک شامل کریں۔ اچھی طرح بھونیں جب تک تیل مصالحے سے الگ نہ ہو جائے۔

4. ابلے ہوئے چنے شامل کریں اور درمیانی آنچ پر 5-7 منٹ دم پر رکھیں تاکہ مصالحہ اچھی طرح چنوں میں رَچ جائے۔

5. اُبلے ہوئے انڈوں کو بیچ میں چاک کر کے چنوں میں شامل کریں۔ اگر چاہیں تو انڈوں کو پہلے ہلکا سا تیل میں فرائی کر لیں۔

6. آخر میں گرم مصالحہ، ہری مرچ اور ہرا دھنیا شامل کر کے مکس کریں

Chicken Kosha

Ingredients:
Chicken – 1 kg (bone-in, curry cut)
Onions – 4 large (finely sliced)
Ginger paste – 2 tbsp
Garlic paste – 2 tbsp
Yogurt – 1/2 cup (whisked)
Tomatoes – 2 medium (finely chopped
Green chilies – 3 to 4 (slit)
Mustard oil – 5–6 tbsp
Bay leaves – 2
Whole garam masala –
Green cardamoms – 3
Cloves – 4
Cinnamon – 1 inch
Red chili powder – 1.5 tsp
Turmeric powder – 1 tsp
Coriander powder – 2 tsp
Cumin powder – 1 tsp
Garam masala powder – 1 tsp
Salt – to taste
Sugar – 1 tsp
Water – as needed

Instructions:

1. Marinate the Chicken:

Mix chicken with turmeric, red chili powder, salt, and half the yogurt.

Let it rest for 1 hour.

2. Fry the Onions:

Heat mustard oil in a heavy-bottomed kadai.

Add sugar, let it caramelize.

Add bay leaves and whole garam masala.

Add sliced onions, sauté till golden brown.

3. Add Ginger-Garlic & Spices:

Add ginger and garlic paste, sauté until raw smell disappears.

Add chopped tomatoes, green chilies, remaining yogurt, and all powdered spices.

Cook till oil separates.

4. Cook the Chicken:

Add marinated chicken. Mix well.

Bhuno (sauté) on medium-high heat for 15–20 minutes, stirring occasionally.

5. Simmer:

Add 1/2 cup hot water.

Cover and cook on low flame till chicken is tender and masala coats it well (20–25 mins).

6. Final Touch:

Sprinkle garam masala, mix gently, and rest covered for 5 mins.

Chicken Makhmali 🐔🌿

Ingredients :
2tbsp Butter
1tbsp Oil
3 Green Cardamoms
1.5 Onions Paste
500g Chicken
1tbsp Ginger Garlic Paste
1/2tbsp Coriander Powder
1tsp Chilli Flakes
1tsp Black Pepper Powder
1tsp Cumin Powder
1tsp Salt or as per taste
1/2 Cup Curd (whisked)
1/2 Cup Water
1/4 Cup Fresh Cream
1tsp Kasuri Methi
1/2tsp Garam Masala

Tadka :
1tbsp Oil
1tbsp Butter
1tsp Cumin Seeds
1 Tomato
1 Capsicum
1 inch Ginger (Juliennes)
2 - 3 Green Chillies (slitted)

Method :
1. Heat oil + butter in a pan. Add green cardamom. Saute for few seconds.
2. Add onion paste and cook till oil separates. Do not brown.
3. Add chicken. Cook till it changes color.
4. Add ginger garlic paste. Cook for 2 mins.
5. Add spices and salt. Mix well.
6. Add whisked curd. Cook till oil separates.
7. Add water and bring to a boil.
8. Cover and cook for 8 - 10 mins.
9. Add fresh cream, kasuri methi and garam masala. Mix well cook for 2 mins
10. For tadka, heat oil and butter in a pan. Add cumin seeds. Saute for few seconds. Add tomato, capsicum, ginge and chillies. Saute for 1 - 2 mins.
11. Add it it the gravy and mix well. Cook for a minute.
12. Serve with rice, roti or breab and enjoy.
