Here’s a soft and fluffy 1 kg pandesal recipe with malunggay flavor — healthy, aromatic, and perfect for breakfast or merienda! 🌿🥖

Ingredients:

Dry Ingredients:
* 1 kg all-purpose flour (about 8 cups)
* 1 ½ tbsp instant yeast (or 2 tbsp active dry yeast)
* 1 ½ tsp salt
* 1 cup white sugar
* 1–1 ½ cups breadcrumbs (for coating)

Wet Ingredients:
* 2 cups warm milk (or water, around 38–40 °C)
* ½ cup melted butter or margarine (or oil)
* 2 large eggs (room temperature)

**Malunggay Mixture:**
* 1/2 cup powdered malunggay)

Instructions**

1. Activate the Yeast (if using active dry yeast):
* In a bowl, combine warm milk (or water), 2 tbsp sugar, and yeast.
* Let it sit for 5–10 minutes until foamy.
But I used instant yeast.

2. Mix the Wet Ingredients:
* In a large bowl, combine melted butter, eggs, the blended malunggay mixture, and the yeast mixture. Stir well.

3. Add the Dry Ingredients:
* Mix in sugar, salt, and gradually add flour (around 6–7 cups first).
* Mix until a soft dough forms. Add the rest of the flour as needed — dough should be slightly sticky but elastic.

4. Knead the Dough:
* Knead for about **10–12 minutes** until smooth and elastic.
* (If using a mixer with a dough hook, knead for about 7 minutes.)

5. First Rise:
* Form the dough into a ball, place in a greased bowl, cover, and let it rise for **1–1.5 hours** or until doubled in size.

6. Shape the Pandesal:
* Punch down dough and divide into portions (about 40–45 pieces for 1 kg flour).
* Shape into logs, cut, roll in breadcrumbs, and arrange on a greased or lined baking tray.

7. Second Rise:
* Cover and let rise again for **30–45 minutes**, until puffy.

8. Bake:
* Bake in a **preheated oven at 180 °C (350 °F)** for **15–20 minutes**, or until golden brown.

9. Cool and Serve:
* Remove from oven, let cool slightly, and enjoy your soft malunggay pandesal!

Tips for Extra Soft Pandesal

* Use bread improver or 1 tbsp vinegar in the liquid if you want fluffier texture.
* Don’t overbake — remove as soon as tops turn light golden.
* For richer flavor, use milk instead of water.

For the Sponge Cake:
Ingredients:
* 4 large eggs, separated
* ¾ cup white sugar (divide into ½ cup and ¼ cup)
* 1 ½ cups cake flour (or all-purpose flour sifted 2x)
* 1 ½ tsp baking powder
* ¼ tsp salt
* ¼ cup vegetable oil
* ¼ cup milk
* 1 tsp vanilla extract
* ¼ tsp cream of tartar (optional but helps make fluffy meringue)

Instructions:
1. **Preheat oven** to **170°C (340°F)**. Line and grease your 8x8 inch pan or round pan.
2. **Mix dry ingredients:** In a bowl, sift flour, baking powder, and salt. Set aside.
3. **Make egg yolk mixture:** In another bowl, whisk egg yolks, ½ cup sugar, oil, milk, and vanilla until smooth.
4. **Combine:** Add dry ingredients to the yolk mixture and mix gently until no lumps.
5. **Make meringue:** Beat egg whites with cream of tartar until foamy. Gradually add ¼ cup sugar and continue beating until stiff peaks form.
6. **Fold:** Gently fold meringue into the yolk batter, a little at a time, until fully combined.
7. **Bake:** Pour batter into the prepared pan. Bake for **30–35 minutes** or until a toothpick comes out clean.
8. **Cool:** Let it cool completely before adding yema frosting.

For the Yema Frosting (Topping & Filling)
Ingredients:
* 1 can (300ml) sweetened condensed milk
* 4 egg yolks
* 1 tsp vanilla extract
* 2 tbsp butter
* 2 tbsp evaporated milk (optional, for creamier texture)

Instructions:
1. In a saucepan (use low heat), combine condensed milk, egg yolks, butter, and evaporated milk.
2. Stir **constantly** until the mixture thickens and turns golden yellow (about 8–10 minutes).
3. Add vanilla extract and mix. Remove from heat and let it cool slightly.

For Topping (optional):
* Grated cheese (cheddar or quick melt)

To Assemble:
1. Slice the cake into two layers (optional).
2. Spread yema frosting in between and on top.
3. Sprinkle **grated cheese** generously.
4. Chill for at least 30 minutes before serving — this makes it firmer and creamier!
