Hakka Yellow Wine was traditionally brewed in Hakka households, and in the past, unless you knew someone who made it, you wouldn’t be able to get hold of it! The good news is that it’s now produced by Xie Jia Niang 谢家娘 using their heirloom recipe. Their Hakka Yellow Wine is available at over 50 medicinal halls and on Shopee: https://shopee.sg/xiejianiang

Made from glutinous rice, wine starter, and red yeast rice, Hakka Yellow Wine is valued in Traditional Chinese Medicine (TCM) for its medicinal benefits. While it is most commonly used in post-partum dishes, it is also regularly enjoyed to warm the body and improve circulation. With an alcohol content of just 6.3%, XJN’s Hakka Yellow Wine can be taken as a gentle tonic on a regular basis.

Today, I’m sharing a Cold Drunken Chicken recipe made with this wine. It’s perfect as a chilled appetizer and can be prepared days in advance. I dare say it’s not only delicious but also good for you too!

INGREDIENTS
• Hakka Yellow Wine – 250 ml + 1 Tbsp https://bit.ly/HakkaYellowWine
• Whole chicken thigh – 2 pieces
• Black fungus – 100 g
• Ginger – 1 thumb-sized piece
• Spring onion – 1 stalk
• Wolfberries (goji berries) – 1 Tbsp
• Sesame oil – 2 tsp + 1 tsp
• Soy sauce – 1.5 Tbsp
• Salt – ½ tsp + a pinch
• Chicken powder – 2 tsp

STEPS
1. Prepare the ingredients
• Peel and slice ½ thumb of ginger into thin strips; cut the other half into large slices.
• Slice the spring onion.
• Rub chicken thighs with ½ tsp salt and remove any blood or organs. Wash thoroughly and pat dry.
• (Optional) Use a toothpick to pin the skin to the meat.
• Season chicken thighs with 2 tsp chicken powder.

2. Steam the chicken
• On a steaming plate, place the rehydrated black fungus (or fresh), then lay the chicken thighs on top.
• Add the ginger strips and spring onion.
• Drizzle with 1 Tbsp XJN Hakka Yellow Wine.
• Steam for 20–25 minutes over low–medium heat.

3. Make the marinating sauce
• In a small pot, heat 2 tsp sesame oil and fry the large slices of ginger until fragrant and lightly browned.
• Add 200 ml XJN Hakka Yellow Wine, wolfberries, and a pinch of salt.
• Simmer gently, then turn off the heat once it comes to a light boil.

4. Marinate
• Let the steamed chicken and black fungus cool.
• Add 2 - 3 Tbsp chicken oil (from the steaming plate) into the marinating sauce.
• Slice the black fungus and mix with 1.5 Tbsp soy sauce + 1 tsp sesame oil. Chill in a container.
• Debone the chicken and place in a separate container.
• Pour the marinating sauce over the chicken and chill for at least 1 hour or overnight.

5. Assembly
• Slice the chilled chicken.
• On a serving plate, layer the seasoned black fungus, then the chicken slices.
• Drizzle with extra marinating sauce.
• Finish with 1 Tbsp XJN Hakka Yellow Wine.
• Serve cold and enjoy!

The BEST charsiu I have had in a long while! Better than any I have had in Singapore! The local fresh pork makes such a big difference! Wonderfully tender yet not falling apart, all the layers of meat are tender and juicy and the fat just melts! Beautifully charred and caramelized! This is one place that would bring me back to Ipoh!
