Steak with Avocado Chimichurri

Ingredients:

1 lb skirt steak
1 tablespoon olive oil
Salt and pepper, to taste
1 ripe avocado
1/4 cup fresh cilantro, chopped
2 tablespoons red wine vinegar
1 tablespoon lime juice
1/4 teaspoon red pepper flakes
2 cloves garlic, minced
1/4 cup extra virgin olive oil

Directions:

Preheat grill or skillet over medium-high heat.
Season the skirt steak with olive oil, salt, and pepper. Grill or sear for 3-4 minutes on each side for medium-rare, or longer depending on desired doneness.
While the steak is cooking, prepare the chimichurri sauce. In a blender or food processor, combine the avocado, cilantro, red wine vinegar, lime juice, red pepper flakes, garlic, and extra virgin olive oil.
Blend until smooth and creamy.
Once the steak is cooked, remove it from the heat and let it rest for a few minutes.
Slice the steak against the grain and drizzle with the avocado chimichurri sauce before serving.

Salt and pepper, to taste
For the Spinach Alfredo Sauce:
2 tbsp unsalted butter
2 cloves garlic, minced
1 1/4 cups heavy cream
1/2 cup grated Parmesan cheese
1 cup fresh spinach, chopped
Salt and pepper, to taste

Directions:

Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a large bowl, combine ground chicken, ricotta cheese, Parmesan cheese, egg, breadcrumbs, minced garlic, oregano, basil, salt, and pepper. Mix until well combined.
Roll the mixture into meatballs (about 1.5 inches in diameter) and place them on the prepared baking sheet.
Bake the meatballs for 20-25 minutes or until golden brown and fully cooked through.
While the meatballs bake, prepare the Spinach Alfredo Sauce. Melt butter in a large skillet over medium heat.

8 oz elbow macaroni
2 cups rotisserie chicken, diced

1 cup grape tomatoes, halved
1/2 cup red onion, finely chopped
1 cup cheddar cheese, cubed
1/2 cup mayonnaise
2 tbsp Dijon mustard
1 tbsp fresh lemon juice

Directions:

Cook the elbow macaroni according to package instructions. Drain and rinse with cold water to cool.

Instructions:

1 cup shredded mozzarella cheese

1 tablespoon olive oil
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon Italian seasoning
½ teaspoon smoked paprika
½ teaspoon red pepper flakes (optional, for heat)
1 tablespoon butter

Instructions:

Preheat Oven: Set your oven to 375°F (190°C).

1/2 tsp onion powder
Salt and pepper to taste
2 large eggs
1/2 cup milk
1 cup breadcrumbs (panko for extra crunch)
Vegetable oil for frying
For the Cool Ranch Dip:
1 cup sour cream
1/4 cup mayonnaise
1 tbsp dried parsley
1 tbsp dried dill
1 tsp garlic powder
1 tsp onion powder
1/2 tsp dried chives
1 tbsp fresh lemon juice
Salt and pepper to taste

Directions:

Prepare the Mushrooms:
Pat the cleaned mushrooms dry with paper towels.
In a shallow dish, mix together the flour, garlic powder, paprika, onion powder, salt, and pepper.
Set Up the Breading Station:
In one shallow dish, whisk together the eggs and milk.
In another shallow dish, place the breadcrumbs.
