Tom Yum Goong (Thai Spicy Shrimp Soup)Ingredients:10 large shrimp (peeled and deveined, with heads for extra flavor)3 cups water2 stalks lemongrass (cut into 2-inch pieces and smashed)5 slices galangal5 kaffir lime leaves (torn)5–10 Thai bird’s eye chilies (smashed)200 g straw mushrooms or oyster mushrooms (cut in halves)3 tbsp fish sauce (adjust to taste)2 tbsp lime juice (adjust to taste)1 tsp sugar3–4 tbsp Thai chili paste (nam prik pao) (optional but adds aroma and color)Fresh coriander (for garnish)---Instructions:1. Boil the brothBring the water to a boil in a pot. Add lemongrass, galangal, kaffir lime leaves, and chilies. Let it simmer for about 5–10 minutes to release the aroma.2. Add mushrooms and shrimpAdd the mushrooms and cook for 2–3 minutes. Then add the shrimp and cook until they turn pink (about 2–3 minutes).3. Season the soupLower the heat and add fish sauce, sugar, chili paste, and lime juice. Stir gently and taste. Adjust seasoning as needed – it should be spicy, sour, and a bit salty.4. ServeLadle the soup into a bowl, garnish with coriander, and serve hot with steamed rice.
