Ingredients:
- Fresh broccoli florets

Instructions:
1. Begin by preparing your broccoli. Wash the florets thoroughly under cold water and trim off any tough stems. Do NOT use frozen broccoli. For that vibrant green color and crunchy texture, we're going to blanch the broccoli. In a pot of boiling water, add a generous pinch of salt and a splash of oil. The salt helps to enhance the flavor, while the oil helps to retain the color and texture of the broccoli.
2. Carefully drop the broccoli florets into the boiling water and let them cook for about 2-3 minutes. Keep an eye on them; you want them to be just tender enough to bite into but still crisp and vibrant green.
3. Once the broccoli is blanched, immediately remove them from the boiling water and transfer them to a bowl of ice water. This stops the cooking process and helps to lock in that beautiful color and crunchiness.
4. While the broccoli is chilling in the ice water bath, prepare your mushrooms. Clean them gently with a damp cloth or paper towel to remove any dirt. Slice them thinly or quarter them, depending on your preference.
5. Heat a tablespoon of olive oil in a large skillet or wok over medium-high heat. If you're using garlic, you can add it to the oil for extra flavor. Sauté the garlic until fragrant, then add in the mushrooms. Cook them until they start to soften and release their juices, about 3 minutes.
6. Once the mushrooms are cooked to your liking, drain the broccoli from the ice water and pat them dry with a clean kitchen towel or paper towel. Add the broccoli to the skillet with the mushrooms, and toss everything together gently.
7. Season with oyster sauce and if you like, you can also add a splash of light soy sauce for extra depth of flavor.
