//The Bread Flour Gap in Papua New Guinea for Home Bakers & small artisan bakers//
Since returning to Papua New Guinea after pastry school, one of my challenges as a pastry chef has been finding good-quality bread flour in practical sizes for home and small-scale artisan baking.
Bread flour is available but often only in 25 kg bags.
For a bakery, that may be practical. For home bakers, beginners and small artisan bakers who want to make sourdough, baguettes or country loaves, it can be too much flour and too great an upfront cost.
Rather than stop baking, I began testing using local plain flour or all purpose flour.
I’ve kept records of my sourdough bakes using locally available all-purpose flour—adjusting hydration, fermentation and handling to understand what the flour can and cannot support. It has worked well for focaccia, but stronger bread flour makes a noticeable difference when developing structure in certain artisan loaves like baguettes & country loaf or pain de campaign.
This experience has shown me that PNG does not necessarily lack aspiring bread bakers. We may simply lack access to the right ingredients in practical quantities.
Making quality bread flour available in 2 kg and 5 kg packs could encourage more people to learn bread-making, test recipes and eventually grow from home baking into small businesses.
Sometimes developing an industry begins with making the right tools and ingredients more accessible.
This is one of the market needs I’m exploring through Beyond Baking: making professional baking ingredients and supplies more accessible to PNG’s growing baking community.

This is a paw patrol themed chocolate cake I made for my nephew.
I love how cake decorating as changed so much over the years with us now being able to decorate cakes like these without the need for fondant. Just print on water paper and cut out and stick on the cake.

2️⃣ Try our salted brownies. The delicate fleur de sel balances out the sweetness of the dark rich chocolate. Trust me- one is not enough.
3️⃣ I'm including blondies too. They're the cousin of the brownie but with a deep butterscotch flavour. I promise you, it's going to become your new favorite sweet treat. 🫢
4️⃣ Enjoy our silky, smooth Basque Cheesecake. The beautifully caramelized top balances out the richness of the cream cheese, creating a dessert that's both indulgent and satisfying. 😌
5️⃣ The hero of our Bake Box is our NYC-Style Chunky Cookie with a delicious nutty chocolate filling. Think Ferreo Rocher in a cookie form. If you ever tried my Nutella Cookies before I went to pastry school, you'll find this version familiar- but even better.

Hello followers, customers & friends,

Thank you all for your support since returning home to Port Moresby after graduating from pastry school in December 2025.

Moving forward, all bakery & catering supplies, B2B sourcing, and pastry consultation work will now be handled through my business page, Beyond Baking.

Beyond Baking is evolving into a Foodservice, Bakery & Hospitality Supply Partner supporting bakers, cafés, restaurants, and food businesses across Papua New Guinea.

We provide:

• B2B sourcing & supply solutions
• Technical pastry & foodservice support

As for Pastry Diaries, this page will continue to document my pastry journey, baking adventures, creative projects, and experiences within the pastry & food industry.

It's a practice cake I made in 2023 on a quarter sheet baking tray.

This is how I practice my cake decorating skills and how I was recently showing some staff in a client bakery I visited recently in Lae.

Use even cardboard to decorate on. Discard remainder in bin.
In pastry school, we used cake foams to create cakes in our wedding cakes classes.

As a baker/cake decorator, you have a responsibility to your customers and to your fellow bakers in in the industry. There are non negotiables that you should be practicing if you want to be seen as trust worthy, build reputation and maintain repeat customers.

To be successful in the long run, you must have repeat customers. That means you are doing something right.
