Wait bc these were so good😭😭 If you really just want to be a simple meal, you could throw these in some taco shells & call it a day. My man put his in a rice bowl with lettuce and a tortilla. (This is for 2 lbs, I made 4 lbs) •Add 2 lbs chicken thighs •Add 1 (14.5 oz) can diced tomatoes with juices •Add 1 can black beans (drained and rinsed) •Add 1½ cups frozen corn •1 yellow or red onion •Pour in 1 jar of medium salsa •4 cloves garlic minced •1 lime juiced •Season with garlic powder, smoked paprika, cumin, chili powder, cayenne, oregano, salt, & pepper. •Cook on high for 4-5 hours or low for 6–7 hours •Shred chicken in the pot and mix everything together •Serve in tortillas with cheese & cilantro * I added cream cheese at the last 30 minutes for some creaminess, it looks kinda like a chicken veggie soup before that, you could definitely leave it like that too!
