🌮Made 5 tacos for weight loss that tasted like Taco Bell.. but way more flavorful! They also had just 470 calories, 59g of protein and a ton of fiber! 🌮
Ingredients-
1lb 93/7 ground beef
1 petite yellow onion minced
5 Mission Zero Soft Street Taco Shells
1-2tsp salt
1-2tsp cumin
1-2tsp chili powder
1/2-1tsp black pepper
1tsp garlic
1/4 tsp Accent seasoning
1/2 cup water
Light spray of olive oil
1.25 servings of Fat Free Kraft Cheddar
Shredded iceberg lettuce
Taco Bell Fire Sauce (or any hot sauce you like)
Print a pan up to temp over medium to medium high heat. Spray pan with oil and add onions. After a minute add the ground beef and break apart into smaller pieces. Start seasoning the meat with salt, pepper, cumin, chili powder, and Accent. I eyeball these and do a nice seasoning here because it’ll get watered down some when we add the water. I like very flavorful meat, so I go fairly heavy on the seasoning. You start to get a feel for when it needs more salt, pepper, cumin, or chili powder the more you practice. Once the meat is just about done browning add your garlic to cook for 1 minute. Then add 1/2 cup of water to bring juice to the meat. I taste test the meat now and adjust my seasonings to what I like (I go for lots of it.. lol!)
Then to build the tacos I originally made 4 but realized the macros allotted 5 for me today! So the numbers might look a little weird, that’s because for 4 it was 150g of taco meat. But this is for the 5 below!
Building the tacos-
Put the tortillas on a pan on medium low heat that was lightly sprayed with olive oil. Pull off pan when warmed. Evenly distribute 187g of ground beef to the tortillas. 1.25 servings Kraft Fat Free Cheddar. I weigh this out by the gram and I rinse the cheese in cold water to get the anti caking coating off. It melts and tastes weird with that coating. Without it, it tastes solid, and has much better texture. I topped it with some lettuce and Taco Bell Fire sauce from the bottle.
This was a great variation of what you’d get at Taco Bell but the meat was SO GOOD. The tortillas are surprisingly soft and pillowy. It all blends together really well, and it’s a great weight-loss meal. Low cal, and plenty of protein and fiber to keep you feeling full.
Oh and of course washed it down with a Baja Blast Zero…
