Today’s combo: a Cajun Garden Soup made with andouille sausage and vegetables straight from Purselle Gardens (okra, cherry tomatoes, pole beans — all homegrown), while we get into everything happening in pop culture right now. Oprah stirring the pot again, the Teyana Taylor Icon Award conversation everybody’s talking about, and the House of the Dragon discourse. Cooking and commentary, exactly how Auntie does it.
Full recipe is below for anyone who wants to make this at home — it’s spicy, smoky, and the okra thickens it up naturally so you don’t even need a roux.
RECIPE: Cajun Garden Soup with Andouille & Garden Vegetables
Serves 6
Ingredients:
• 12 oz andouille sausage, sliced
• 6 cups chicken broth
• 2 cups fresh okra, sliced
• 1.5 cups cherry tomatoes, halved
• 1.5 cups pole beans, cut into 1-inch pieces
• 6 scallions, sliced (whites/greens separated)
• 5 garlic cloves, minced
• 3 celery stalks, diced
• 1 yellow onion, diced
• 1 green bell pepper, diced
• 2 tbsp olive oil or butter
• 2 tsp Cajun seasoning
• 1.5 tsp smoked paprika
• 1 tsp dried thyme
• 0.5 tsp dried oregano
• 0.25 tsp cayenne
• 0.5 tsp red pepper flakes
• 2 bay leaves
• 1 tbsp Worcestershire sauce
• 1 tbsp apple cider vinegar
• 1 tsp kosher salt, 0.5 tsp black pepper
Instructions:
1. Sear andouille in oil/butter, 3–4 min. Set aside.
2. Sauté onion, bell pepper, celery 5 min. Add scallion whites and garlic, 2 more min.
3. Add all spices, stir 60 sec to bloom.
4. Add broth, Worcestershire, vinegar, bay leaves, salt, pepper, and sausage. Bring to a boil.
5. Add pole beans, simmer 12 min uncovered.
6. Add okra and tomatoes, simmer 10–12 min more. Discard bay leaves.
7. Taste, adjust, top with scallion greens. Serve over rice or with crusty bread.
