Sautéed Chicken and Mushroom Pasta
Creamy Chicken Mushroom Pasta Delight
Ingredients:

2 tablespoons olive oil
1 pound chicken breast, thinly sliced
8 ounces mushrooms, sliced
1 small onion, chopped
3 cloves garlic, minced
1 cup chicken broth
1 cup heavy cream
1 teaspoon dried thyme
Salt and pepper to taste
12 ounces pasta, cooked
Fresh parsley, chopped (for garnish)
Directions:

Heat olive oil in a large skillet over medium heat. Add chicken slices and cook until browned. Remove and set aside.
In the same skillet, add mushrooms, onion, and garlic. Sauté until mushrooms are browned.
Pour in chicken broth, heavy cream, thyme, salt, and pepper. Bring to a simmer.
Return chicken to the skillet and cook until sauce thickens.
Add cooked pasta and toss to coat evenly with the sauce.
Garnish with chopped parsley and serve warm.

Cheesy Hamburger Noodle Casserole
Ingredients:

2 tablespoons olive oil
1 pound ground beef
1/2 cup chopped onion
2 cups prepared tomato sauce
1 teaspoon sugar
1 teaspoon kosher salt
1/4 teaspoon garlic powder
1/4 teaspoon black pepper
4 cups uncooked egg noodles
1 cup cottage cheese
8 ounces cream cheese, softened
1/4 cup sour cream
1/3 cup chopped scallions
1/4 cup chopped green bell pepper
1/2 cup grated Parmesan cheese
Directions:

Preheat oven to 350°F. Spray a 9x9x3-inch casserole dish with non-stick cooking spray.
In a large skillet, brown beef and chopped onion in olive oil. Drain fat.
Add tomato sauce, sugar, salt, garlic powder, and black pepper. Mix and set aside.
Cook egg noodles to just under al dente. Drain and set aside.
In a large bowl, mix cottage cheese, cream cheese, sour cream, scallions, and bell pepper.
Layer half the noodles in the casserole dish, followed by half the beef mixture, all the cheese mixture, remaining noodles, and beef mixture. Top with Parmesan cheese.
Bake uncovered for 30 minutes until hot and bubbly, and the top is golden.

Hearty Hashbrown and Beef Casserole
Ingredients:

1 lb ground beef
1 Tbsp minced onion
1 tsp garlic powder
30 oz frozen shredded hash browns
10 oz can cream of mushroom soup
1 cup milk
1 tsp smoked paprika
2 cups shredded cheddar cheese
Salt and pepper to taste
Directions:

Preheat oven to 350°F.
Brown ground beef with minced onion and garlic powder in a skillet. Drain fat.
Mix browned beef, hash browns, cream of mushroom soup, milk, smoked paprika, and 1 cup of cheddar cheese.
Pour mixture into a 9x13-inch baking dish. Top with remaining cheese.
Bake for 30-40 minutes until cheese is melted and bubbly.

6 slices rye bread, cubed
1 lb sliced corned beef
14 oz sauerkraut, drained
2 cups shredded Swiss cheese
1/2 cup Thousand Island dressing
1/4 cup mayonnaise
2 tbsp Dijon mustard
Directions:

Preheat oven to 350°F.
Spread cubed rye bread in a greased 9x13 inch baking dish.
Layer the corned beef over the bread, followed by sauerkraut.
In a bowl, mix Thousand Island dressing, mayonnaise, and Dijon mustard.
Pour mixture evenly over sauerkraut.
Sprinkle Swiss cheese on top.
Bake for 30 minutes until cheese is melted and bubbly.

1 pound lean ground beef
8 ounces cubed Velveeta cheese
1 packet taco seasoning (1 ounce)
1 can diced tomatoes and green chilies (10 ounces)
1 can cream of chicken soup (10.5 ounces)
1.5 cups shredded cheddar cheese
8 ounces spaghetti pasta
2/3 cup water
Directions:

Preheat oven to 350ºF.
Cook spaghetti until al dente, drain, and set aside.
In a skillet, brown ground beef, drain fat, and return to heat.
Add taco seasoning, water, cream of chicken soup, diced tomatoes and green chilies, and Velveeta cheese. Cook until cheese melts and mixture combines.
Add cooked spaghetti to the skillet and toss to coat.
Transfer mixture to a baking dish, sprinkle with cheddar cheese.
Bake for 25-30 minutes until cheese is melted and bubbly.

Hearty Slow Cooker Ravioli Casserole
Ingredients:

1 1/2 lbs. lean ground beef
1 onion, chopped
1 clove garlic, minced
1 (15 oz.) can tomato sauce
1 (15 oz.) can stewed tomatoes
1 tsp. oregano
1 tsp. Italian seasoning
Salt and pepper to taste
10 oz. frozen spinach, thawed (or fresh spinach)
16 oz. bowtie pasta, cooked
1/2 cup parmesan cheese, shredded
1 1/2 cup mozzarella cheese, shredded
Directions:

Brown ground beef with onion and garlic in a skillet.
Transfer the mixture to a crockpot. Add tomato sauce, stewed tomatoes, oregano, Italian seasoning, salt, and pepper.
Cook on low for 6-7 hours.
In the last 30 minutes, set the crockpot to high and add spinach, cooked pasta, parmesan, and 1 cup mozzarella. Stir well.
Sprinkle the remaining 1/2 cup mozzarella on top and let it melt before serving.

Ingredients:

1 (16 oz) package cornbread mix
3/4 cup milk
1 large egg
1 (7 oz) can diced green chiles, drained
1 (14.5 oz) can creamed corn, undrained
1 (10 oz) can green enchilada sauce
2 tablespoons taco seasoning, divided
3 cups cooked, shredded chicken
1 cup shredded cheddar cheese
1/2 cup shredded Monterey Jack cheese
Directions:

Preheat oven to 400°F (200°C). Lightly spray a 9x13 inch baking dish with nonstick cooking spray.
In a large mixing bowl, combine cornbread mix, milk, egg, green chiles, 1/2 tablespoon taco seasoning, and creamed corn. Stir until just combined.
Spread the mixture evenly in the prepared baking dish. Bake for 20-25 minutes, until just set and golden brown.
While baking, toss shredded chicken with remaining taco seasoning.
Remove dish from oven and poke holes all over the cornbread base with a skewer.
Pour enchilada sauce evenly over the cornbread base, spreading to seep into holes.
Spread seasoned chicken over the top and sprinkle with cheeses.
Bake for an additional 15 minutes, until cheese is melted and golden brown.

Traditional German Blueberry Kuchen
Ingredients:

For the shortcrust pastry:

200 g all-purpose flour (1 2/3 cups)
1 ½ teaspoons baking powder
75 g sugar (6 tbsp)
1 teaspoon vanilla extract
1 egg (XL)
100 g soft cold butter (7 tbsp)
Pinch of salt
For the filling:

1 kg blueberries (4 cups)
100 g sugar (1/2 cup)
2 tablespoons lemon juice
1 teaspoon lemon zest
50 g vanilla pudding powder (or use cornstarch and 1 tbsp vanilla extract)
For the crumble topping:

100 g all-purpose flour (3/4 cup)
75 g sugar (6 tbsp)
1 teaspoon vanilla extract
80 g soft cold butter (6 tbsp)
Directions:

Prepare the filling: Wash the blueberries and place them in a saucepan with sugar, lemon juice, and zest. Bring to a boil while stirring. Dissolve pudding powder or cornstarch with 5 tbsp cold water, add to the berries, and stir until thickened. Let cool.

Prepare the pastry: Sift flour and baking powder into a bowl. Add sugar, vanilla extract, and salt. Mix well. Add the egg and cubed butter, and knead until smooth. Line a springform pan with parchment paper. Use half the dough for the base, and shape the rest into rolls for the sides.

Add the filling: Pour the cooled blueberry mixture evenly onto the pastry base.

Prepare the crumble topping: Combine flour, sugar, vanilla extract, and butter. Rub the mixture between your hands to form crumbs. Sprinkle evenly over the blueberries.

Bake: Preheat oven to 182°C (360°F). Bake the cake on the middle rack for 40-45 minutes. Cool in the pan before transferring to a serving plate. Sprinkle with powdered sugar and serve with whipped cream.

Savory Sausage and Spring Veggie Casserole
Ingredients:

1 lb of your favorite sausage, sliced
4 medium-sized potatoes, peeled and chopped into bite-sized pieces
1 cup of asparagus, trimmed and cut into 1-inch pieces
1 small yellow onion, diced
2 cloves of garlic, minced
1 cup of shredded cheddar cheese
1 cup of chicken or vegetable broth
2 tablespoons of olive oil
1 teaspoon of dried thyme
Salt and pepper to taste
Fresh parsley for garnish (optional)
Directions:

Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish with a bit of olive oil or cooking spray.
Heat a large skillet over medium heat and cook the sausage slices until they're nicely browned. Remove them from the skillet and set aside.
In the same skillet, add the chopped potatoes and cook for about 10 minutes, or until they start to soften. You might want to add a touch more oil if needed.
Add the diced onion and minced garlic to the potatoes and continue to cook for another 3-5 minutes until the onion is translucent.
Transfer the cooked potatoes, onions, and sausage into the prepared baking dish and gently mix in the asparagus.

1 lb uncooked pasta (rotini preferred)
1 cup sweet corn
3 Roma tomatoes, chopped
1/3 cup red onion, diced
1 1/2 cups grated Monterrey Jack cheese
Salt and freshly cracked peppercorns
1 1/4 cups ranch dressing
3/4 cup BBQ sauce
1 cup grated Monterrey Jack cheese (for topping)
Directions:

Preheat oven to 350°F (175°C). Lightly grease a casserole dish.
Cook pasta until al dente, drain and set aside.
Cook chicken breasts with salt until done. Let cool, chop and set aside.
In a large mixing bowl, combine tomatoes, onion, corn, pasta, and chicken. Add salt and pepper.
Whisk ranch dressing and BBQ sauce, then mix into the pasta.
Add 1 1/2 cups cheese and mix well. Transfer to casserole dish, top with remaining cheese.
Bake for 15-20 minutes until cheese is melted.

1 small head of cabbage, cored & chopped
1 (14 oz) can diced tomatoes
2 tsp Tony Chachere's creole seasoning (or substitute)
2 tsp garlic powder
2 tsp smoked paprika
1 tsp black pepper
2 cups shredded cheddar cheese
Directions:

Brown the beef in a large skillet over medium heat. Remove excess fat.
Add the chopped onion and bell pepper; cook for 3-4 minutes.
Stir in the cabbage, diced tomatoes, and seasonings. Cover and cook for 20-25 minutes, stirring occasionally. Adjust seasoning if needed.
Sprinkle the cheese over top and cover until melted.
Serve alone or with rice.
