Bruschetta Dip 🧀🍅
A delightful and creamy dip that captures the fresh flavors of classic bruschetta, perfect for parties or as a tasty appetizer.
Ingredients:
**For the Bruschetta:**
- 4 Roma tomatoes, diced
- ¼ cup basil leaves, chopped
- 1 garlic clove, minced
- 1 tablespoon extra virgin olive oil
- 1–2 teaspoons balsamic vinegar
- Salt, to taste
**For the Cheese Mixture:**
- 8 oz feta cheese block, crumbled
- ½ block cream cheese (4 oz), softened
- ½ cup sour cream
- 1 garlic clove, minced
- 1 tablespoon lemon juice, freshly squeezed
- 1 tablespoon olive oil
- Salt, to taste
**For Garnishing:**
- More basil leaves, chopped
- Red pepper flakes
- Parmesan cheese, freshly grated
Directions:
1. Prepare the Bruschetta: In a medium bowl, combine the diced Roma tomatoes, chopped basil, minced garlic, extra virgin olive oil, balsamic vinegar, and salt. Mix well and set aside to allow the flavors to meld.
2. Make the Cheese Mixture: In a separate bowl, blend the crumbled feta cheese, softened cream cheese, sour cream, minced garlic, lemon juice, olive oil, and salt until smooth and creamy.
3. Combine the Mixtures: Gently fold the bruschetta mixture into the cheese mixture until well combined.
4. Serve: Transfer the dip to a serving bowl and garnish with additional chopped basil, a sprinkle of red pepper flakes, and freshly grated Parmesan cheese.
