Just made this creamy Chicken Gnocchi Soup and it's perfect for a cozy dinner! 🥣✨
Ingredients:
2 tablespoons olive oil
1 small onion, chopped
2 cloves garlic, minced
2 medium carrots, chopped
2 celery stalks, chopped
1 teaspoon dried thyme
1 teaspoon dried basil
4 cups chicken broth
2 cups cooked chicken, shredded
1 cup half-and-half
1 pound gnocchi
2 cups fresh spinach
Salt and pepper to taste
Directions:
In a large pot, heat olive oil over medium heat. Add onion and cook until translucent, about 3 minutes. Add garlic, carrots, and celery, and cook for another 5 minutes.
Stir in thyme and basil, then add chicken broth and bring to a boil. Reduce heat and simmer until vegetables are tender, about 10 minutes.
Add shredded chicken and half-and-half, and simmer for another 5 minutes.
Stir in gnocchi and cook until they float to the top, about 3-4 minutes.
Add spinach and cook until wilted, about 2 minutes. Season with salt and pepper to taste.
Serve hot and enjoy!
