grilled elote ~

3 medium ears sweet corn, husks removed or peeled back
cotija cheese, crumbled
green onion, thinly sliced
chopped cilantro
lime juice + zest
olive oil, drizzled
ground chipotle pepper + cayenne
salt

grill that corn and slice it off of the cob once it’s done. mix up all of the ingredients (you choose how much you want to put in of each ingredient). enjoy!

Who is sick of hearing about how seed oils are toxic? Me! 🙋🏽‍♀️ Why we even allowed motor lubricant to be sold in grocery stores and labeled as heart healthy cooking oil is beyond me...but the health community is getting so hyperfocused on this topic. If we are eating a diet rich in real, whole foods from the earth we don’t need to worry about seed oils in the first place. If you scan the ingredients in literally ALL highly processed foods, you will see canola, palm, soybean, vegetable and corn oil. You’ll also see a MASSIVE list of food coloring, chemical preservatives, sugar, HFCS, wheat/corn/flour and fake ingredients that are also contributing to the downfall of human health…

Focus on simplifying your plate by eating seasonal produce, proteins, properly prepared grains and fresh herbs. Try cooking a majority of your meals at home with tallow, 100% avocado oil, butter, ghee, chicken schmaltz, bacon fat, etc. You get to control what goes into your body.

Now, I’m not saying that seed oils shouldn’t be avoided for the most part, but heck if I’m out with my friends and they order fries, I’m definitely having a few. I don’t care if they are fried in canola oil. I’m very much aware of that. I have built my bodys resilience to stressors by building up my redox potential through grounding, limiting blue light exposure, optimizing my circadian rhythms and using light to my advantage.

In response to many of you asking if I’m going to be joining ‘Threads’. I’ve been experiencing a lot of growth through trauma work lately & the last thing that my nervous system needs is yet another app that keeps me glued to my phone all day long. Absolutely no judgement or hate for those that are enjoying the newest social media platform, but I personally cannot get involved. I have been in an overstimulated state for the past few years while growing this platform & frankly I need to pull back.

For the past few years, my entire day has been spent thinking about social media, new trends, how to go viral, etc. I found myself laying in bed at night thinking about Instagram and how to increase my following. For what, exactly? I’m not entirely sure. Still figuring that one out.

I found myself living for social media. Going somewhere new wasn’t even fun for me anymore because I convinced myself that I need to share the experience with others and make perfect content/take videos to later post. I would go out and buy ingredients that I typically wouldn’t just so that I could be part of a trending recipe. I would spend my weekends (the only time that I have with my husband) making videos and asking him to be quiet while I filmed. There is an ugly side to social media and I’m currently trying to build a healthy relationship with it & not let it change who I am.

What are your thoughts on this?

Food waste mainly occurs due to:

- the manufacturing and transportation of food — so EAT LOCAL. Why do we think it’s good for us to eat prematurely picked produce that is carried from one state/country to another? Food grown in a different amount of UVB than you are currently living in is going to cause inflammation in the body. Example: a mango grown at 10 UVB in Costa Rica eaten by a person living with NO UVB in Montana in the winter. Our gut is always preparing ourselves to digest foods and it changes depending on the amount of light and sun in our environment. How cool!

- food not meeting retailers standards for “perfection” guess what? When you grow food at home or pick up groceries from the farmers market they don’t look perfect either!!

- crops left in fields because too many of the same crops being available. People are too obsessed with convenient alternatives & shiny new products that they neglect the food that is actually good for us.

ALL FOOD WASTE IS HIGH QUALITY AND PERFECTLY SAFE TO EAT

America has MORE than enough food to feed everyone twice over and yet 34 million face hunger. What are we going to do differently?

herbal hair oil ~

1 cup jojoba oil
4 tbsp castor oil
1.5 tbsp each of dried horsetail, rosemary and oatstraw. If you can only get 2, get horsetail and rosemary

Combine jojoba oil with herbs and heat on extra low heat for 6-8 hours. Strain through a cheese cloth and add castor oil. Massage your head for 2-5 mins before applying. Leave it in for a few hours before shampooing or sleep with it overnight (hair wrapped if u don’t want it to get on your pillow). Shampoo throughly. Enjoy!

For the last year, my priority has been to remove myself from the current food system and instead recapture the simplicity of providing for myself in my local environment. We buy a half cow every 1.5 years from a ranch an hour north of where we live, I text my egg lady whenever I need a dozen or two, I pick up milk and dairy from the dairy farm 20 mins from my house and I am part of a community supported agriculture program that provides me with local and seasonal produce. Not only does the food taste 10x better, but I feel good about who I’m supporting.

For most of human history we have provided our own food and it only took 2 generations to confuse the public into thinking that farming is dangerous to our planet. We need to collectively take our power back by supporting the backbone of our society. I’ve compiled most of the farms that y’all sent me but we need more!!

Just for reference, my CSA box was $38 this week (all locally grown, organic produce). Half a gallon of raw milk & a tub of butter cost me $17 which includes a $2 glass bottle deposit and my duck eggs were $6 for a half dozen chicken eggs are $7 for the dozen.

These are three separates places. A chicken farm, a dairy and my CSA pickup.

Does my husband think I’m crazy? Well, yes… but has his sleep and energy improved since switching out our light bulbs? YES! So my crazy plan has worked!

After sunset, there is ZERO natural blue light in our environment. Artificial light at night is one major cause of hormonal imbalance & hormone health is dependent on a strong circadian rhythm.

When blue light disappears from the environment, melatonin is meant to be released. Melatonin influences things like cell autophagy, reducing inflammation and it can reverse oxidative stress done to the body throughout the day. Melatonin is the master antioxidant :) Artificial light will trigger our body to create cortisol INSTEAD of melatonin.

After sunset, my husband and I turn our phone screens red, our TV red (if we want to watch a show) and red light bulbs to see our surroundings. Sunset right now is around 8pm and we are asleep in bed by 9/9:30.

These are literally just red light bulbs from lightbulbs.com I’m sure you can find nicer ones or IR light bulbs! We are hoping to find a lighting system for our future home that will change the lighting depending on the time of day. That would be super cool!

breakfast patties:

1 lb ground pork
1.5 tbsp maple syrup
1 tsp salt
1.5 tbsp fresh chopped sage (minced)
1/2 tsp fennel seeds
+ any other mild spices u wanna add - pepper, paprika, red pepper flakes

potato leek soup

2 large leeks
3-4 cups chicken broth (the more you add, the thinner the soup)
3-4 medium potatoes
1 bay leaf
1 tsp salt
sprigs of fresh thyme
2 tbsp butter or ghee
heavy cream

thinly slice leeks and wash them properly. they will be really dirty. peel and chop your potatoes. in a pot add the butter and leeks and caramelize over medium heat. stir occasionally. add in the bay leaf, potatoes, fresh thyme and cover with chicken broth. bring up to a boil and turn down to low and simmer until potatoes are cooked through. take out the bay leaf and thyme and blend. add cream and enjoy. salt to taste.

The flavor from the original chicken deeply flavors the rest of the broth! I like to add in ends of carrots, onions, a bay leaf & star anise.

Just for reference, a 14oz jar of bone broth from the grocery store costs about $10.99 without tax. Why not save your chicken bones in the freezer until you have enough to make broth? I save alll different kinds of bone: lamb, beef, chicken, shrimp, etc.

regular ol creme brûlée bc I’m not going to jump through hoops to make this dessert dairy free vegan protein-rich gluten free sugar free keto and animal based

1 cup heavy cream
pinch of salt
1/2 tbsp vanilla extract
3 egg yolks
3 tbsp or 1/4 cup sugar (or sweetener of choice)

heat your oven to 325 and boil some water in a teapot. in a pot over medium heat, bring your cream, vanilla and salt to a simmer. whisk to combine. turn off the heat and let the mixture sit for 5 mins to cool

in medium bowl whisk the yolks and sugar together. SLOWLY add in warm cream while whisking. we do not want the eggs to scramble. steady slow steam of warm cream while whisking fast. pour the mixture into a large ramekin or smaller ones (4-6oz). add ramekins to a larger baking dish or pyrex. open the oven and pour boiling water into the baking dish until it reaches halfway up the sides of the ramekins. you don’t want ANY water going into the custard

bake in the oven for 40-45 minutes. if your using smaller ramekins it might take less time. take them out of the oven when the edges are firm but the middle still jiggle jiggles. refrigerate until they are set, overnight.

add a super thin layer of sugar on top and brulee with a torch until it is crispy and browned. enjoy!
