It’s been a little bit. We were going to do the 30 day test of spoilage on the first week of June.
Well, my circumstances changed drastically so for those who don’t know my wife, Caroline unexpectedly passed away on June 3rd. We were actually planning to test the night when everything changed. I miss her so much as do the children, but I must continue on in her honor. I’ll share more about her soon in the Newsletter, but wanted to update that I went ahead and did the 60 day test.
Results: This did not turn out too well. These bags were even sealed with Nitrogen.
There is clear evidence of spoil and mold.
It looks a little moist in certain areas.
The smell is slightly fermented as though we made wine.
I tried to taste it before the kids practically slapped it out of my mouth so I don’t know about that one.
Didn’t even get to the pH strips before
we decided to rule this a bad batch.
Now one thing to note is that the one bar that had the obvious signs of molding had the least amount of Nitrogen. So there’s a factor.
I’m not 100%, but I’m going to say this is a combination of the dates and bananas along with the pumpkin seeds.
At any rate, back to the drawing board on testing for spoilage. Next batches we’ll test by week, and see how far we get.
Again these are sealed bags with oxygen displaced by nitrogen at room temperature.
From my understanding from feedback these bars FREEZE VERY WELL.
