β¨ **Besan Chila (Chickpea Flour Pancake)** β¨
A protein-packed, savory pancake youβll want to make every morning π
**Ingredients:**
* 1 cup besan (chickpea flour)
* Β½ cup whole wheat flour
* 1 tsp bhuna kuta cumin seeds (roasted & crushed cumin)
* 1 tsp chili flakes
* Salt to taste
* 3β4 green chilies, finely chopped
* Β½ onion, chopped (omelette style)
* Β½ bunch cilantro (or any veggies you like)
* Water as needed to make a smooth batter
* Oil spray for cooking
**Method:**
1. In a bowl, combine besan, wheat flour, cumin seeds, chili flakes, salt, onion, chilies, and cilantro.
2. Gradually add water to form a smooth, pourable batter.
3. Heat a nonstick pan and lightly spray oil.
4. Pour a ladleful of batter and spread it like a pancake.
5. Cook on medium heat, flip, and cook both sides until golden brown.
**Garlic Chutney:**
* Take 2 whole bulbs of garlic, peel & grate them.
* Heat a little oil in a pan, add the grated garlic.
* Sprinkle a pinch of chili flakes, Β½ pinch red chili powder, and salt.
* SautΓ© until the raw garlic smell disappears and it turns fragrant.
Serve your crispy besan chila hot with garlic chutney & a side of Greek yogurt or plain dahi π€
