This week’s Dish’n Dames featured chef has been an educator, catering chef, manager, and event planner creating award-winning events both in Washington, D.C. and San Antonio, Tx. She has been highlighted as one of San Antonio’s leading ladies, reshaping the Alamo City’s food scene with her passion for seasonal ingredients.

Chef Katrina Flores developed her passion for food at an early age while cooking alongside her Spanish-speaking grandmother. “Cooking was the language we used to bond and develop our
relationship.”

The experience of learning her grandmother’s recipes and style of cooking was the foundation for Katrina’s extensive culinary career which included earning two Bachelor of Science degrees from the prestigious Johnson and Wales University in Providence, RI, and running the Culinary and Wellness programs at the San Antonio Botanical Garden.

Today, in her current position as sous chef at Tributary Restaurant in Marriott River Center, Katrina holds a management position overseeing seven restaurant outlets within two downtown hotels, consisting of 1,600 rooms.

This week’s Dish’n Dame, Nadia Hernandez, first cut her teeth in the hospitality industry at 16, working in roles ranging from hostess and server to bartender. She began her journey into fine dining at Ruth’s Chris, later Qui and Kuneho, learning the ropes of the upscale dining experience and gaining knowledge about a growing list of wines and spirits, as well as their complementary role to food.

In 2018, after a brief hiatus, Nadia began working as a server at Otoko and has been an essential part of the team since, stepping into a variety of roles, always ready for a new challenge. With encouragement from OTOKO + WATERTRADE management, Nadia moved over to WATERTRADE permanently as the lead bartender in the space. Since jumping into the role in November 2020, Nadia has taken lead on cocktail development, ex*****on of service and coordinating collaborative events with leading female talent in the industry.

Building on extensive knowledge from 16 years in the industry, Nadia continues to stay inspired and passionate about continuing to develop her craft, along with knowledge about the world of whisky and shochu.

Chef Naomi Kubo serves as the “Fish Maestro'' for the Tatsu-Ya group and manages the raw departments for Tiki Tatsu-Ya and Kemuri Tatsu-Ya. Her interest and experience in seafood products originates from the early years spent at her mother’s sea urchin / seafood import/export business that has been in operation in Baja
California for nearly 40 years.

Not knowing if she’d follow in her mother’s footsteps, Kubo moved to San Diego,
California, where she began her sushi career, quickly realizing her skills in fish
fabrication and differentiating seafood products.

Over the years, Kubo has focused on bettering her craft by working with acclaimed chefs and restaurants. Before serving in her current position at Tatsu-Ya, Kubo worked at Uchi from 2017 through 2017, where she was promoted to second lead sushi chef.

Prior to moving to Austin, Texas, Kubo also spent time working as a line cook at Juniper
and Ivy, led by Top Chef All-Star winner Richard Blais.In addition to her work with Tatsu-Ya, Kubo also works with Chef Jeffrey Lunak, a disciple of Iron Chef master Masaharu Morimoto. She helps manage his business, Sumo Dogs, each at the Coachella Valley and Arts Music Festival. Kubo is a creative, hard-working chef, a Japanese American, and credits her close family and friends for keeping her inspired. Outside of her culinary life, Kubo loves the art of television and has participated as an extra on AMC’s TV show, “Fear the Walking Dead.”
