Ingredients:
- 1 ½ cups glutinous (sticky) rice
- 2 cups water
- 1 can coconut milk
- ½ cup sugar
- 1 Tbsp cornstarch
- 2 Tbsp water (for slurry)
- 1–2 ripe mangoes, peeled and sliced
Instructions:
1. Rinse the glutinous rice thoroughly until the water runs clear. Add the rice and 2 cups of water to a rice cooker
2. While the rice cooks, heat the coconut milk and sugar in a saucepan over medium heat. Stir until the sugar dissolves
3. Once the rice is cooked, pour 1 cup of the sweetened coconut milk over the warm rice. Stir to combine and let it sit, covered, for about 15–20 minutes
3. In a small bowl, mix the cornstarch with 2 tablespoons of water to make a slurry. Return the remaining coconut milk to the stove over medium heat, add the slurry, and stir continuously until the sauce thickens.
