Chicken, Lemon & Ricotta Meatballs
Ingredients
For the Meatballs:
1 lb ground chicken
1/2 cup ricotta cheese
1/4 cup grated Parmesan cheese
1 egg
1/2 cup breadcrumbs
Zest of 1 lemon
2 cloves garlic, minced
2 tbsp fresh parsley, chopped
Salt and pepper, to taste
2 tbsp olive oil (for frying)
For the Pasta and Sauce:
8 oz pasta (such as linguine or spaghetti)
2 tbsp butter
2 cloves garlic, minced
Juice of 1 lemon
1/2 cup heavy cream
1/4 cup grated Parmesan cheese
Salt and pepper, to taste
Fresh basil or parsley, chopped (for garnish)
Directions
Make the meatballs: In a large bowl, combine ground chicken, ricotta cheese, Parmesan cheese, egg, breadcrumbs, lemon zest, minced garlic, chopped parsley, salt, and pepper. Mix until well combined. Form into 1-inch meatballs.
Cook the meatballs: In a large skillet, heat the olive oil over medium heat. Add the meatballs and cook, turning occasionally, for 8-10 minutes until browned and cooked through. Remove from the skillet and set aside.
Cook the pasta: While the meatballs are cooking, cook the pasta according to the package instructions. Drain and set aside.
Make the sauce: In the same skillet used for the meatballs, melt the butter over medium heat. Add the minced garlic and sautΓ© for 1-2 minutes until fragrant. Stir in the lemon juice, heavy cream, and Parmesan cheese. Season with salt and pepper to taste. Simmer for 3-4 minutes until the sauce thickens slightly.
Combine: Add the cooked pasta to the skillet with the sauce, tossing to coat the pasta evenly. Add the meatballs back to the skillet, gently tossing to combine.
Serve and garnish: Serve the meatballs and pasta hot, garnished with fresh basil or parsley and extra lemon zest if desired.
