This easy summer dip is loaded with corn, avocado, tomatoes, lime, and fresh veggies for the perfect side dish, BBQ appetizer, pool day snack, or cookout recipe. It’s fresh, colorful, and always one of the first things to disappear.

FRESH CORN DIP
Ingredients:
• 1 small red onion, finely diced (about ½ cup)
• 1 small green bell pepper, diced
• 1 medium tomato, seeded and diced
• 1 jalapeño, seeded, ribbed, and finely diced
• 2 (15 oz) cans whole kernel corn, drained well
• 1 avocado, diced
• 2 tbsp white vinegar
• 1 tbsp fresh lime juice
• 1 tsp kosher salt
• ½ tsp black pepper
Instructions:
1. Drain the corn well and add it to a large bowl.
2. Add the red onion, bell pepper, tomato, jalapeño, and avocado.
3. In a small bowl, whisk together the vinegar, lime juice, salt, and pepper.
4. Pour over the vegetables and toss gently to combine.
5. Refrigerate for at least 30 minutes before serving.
6. Taste and adjust seasoning as needed.
